open honeycombs are considered immature. Since there will be a lot of water in this honey, it spoils quickly. Therefore, two-thirds of the honeycomb slats should be glazed.
@@luishesselmann2012 I am a beekeeper in Turkey. My hives are 3 storeys now, so there are 2 layers of hives on it. When the combs are completely closed, I filter the honey.

It seems because the honey in the clip is longan honey, a kind of well-know honey for its rich aroma, and it also has a relatively good price in the market. While the flowering period of the longan tree is quite short, about only 3 weeks a year in April. So most beekeepers decide to harvest immature honey for higher yields. Only few keep mature longan honey, but the cost is single harvest a year. (but actually like no one in Taiwan cares about longan honey is immature or not, even me before I saw your comments😂) Btw they still offer “covered honey” in non-longan seasons, and use the term “mature honey” as promotion.
@@tomliu99 Honeys belonging to different plant species are harvested once a year. 3 weeks is not a short time, 3 weeks is enough time for the honey harvest. A strong bee colony fills all the slats and covers them within 3 weeks. We transport hives to different regions in May, June, July, August and September and the hives are filled with glazed honey. Those who want to learn beekeeping should watch the training videos of Turkish beekeepers.
I’m a bee keeper and I don’t understand why did they harvest single brood boxes where the queen is? Why can’t put a queen excluder and a second box on top and harvest that instead? Also why don’t they wait till the honey is capped to harvest so the moisture level is low?
