Really impressive how they manage so many bees and produce so much honey, but part of me worries that this might be affecting local bee populations negatively .
Honey bees eat honey all the time. It's what they eat. They make far more than they need, though. If honey farms didn't leave the bees enough honey to eat, then the hive would fail, and the bees would die. Honey farms only harvest the extra honey... they leave the bees with enough honey to feed the hive. If honey farms left all the honey, then other predators would steal the honey. A big issue with hives is hive beetles and wax moths, among other predators, and when a hive gets so big that the honey bees can't defend it all, other predators move in, which can over take the hive and cause it to fail (where the bees either die or abandon the hive). Wild bees, like bumble bees, only make enough honey to feed the hive, so there is no extra honey for people to take. This is one reason why bumble bees aren't kept to make honey on honey farms. Honey farms aren't hurting the bees, and they aren't taking all the honey. The farms leave enough honey for the bees to eat. If the bees don't make any extra honey for the farm to take, then the honey farm wouldn't take any honey from that hive. Some hives do struggle to make enough honey for the winter, and honey farms even feed those bees throughout the winter. No beekeeper wants their hives to fail.

Well true, but 1 bee only produces about 1/8th of a teaspoon of honey in it's life cycle.
