    Thank you - I spent all afternoon trying to find compatible cartridges for my new fresh cream dispenser - surely this should be made very clear since there have been horrific stories about people being badly injured!

    Those 'Bow Tie Cocktails' would also make a plating partner with chicken kabob, pork kabobs...etc. I have used soda siphons for decades but this video has opened a whole lot of tasty ideas. I need to explore the nitrous oxide foams. Janie did an especially fine summary of the video.

    Beer is pushed with N2 nitrogen , whipped cream is N2O nitrousoxide . N2,N2O,CO2 are all different things

    Nice part of getting old with money ya can piss off money for multiple siphons and a shitload of charging cartridges. Love mine….too much fun

    If you use carbon dioxide, can you infuse it into fruit and make it fizzy? I've seen people using dry ice in an icy cooler over a few days but maybe an ISI speeds it up?

      Yes you can use a whipping siphon to make fizzy fruit, it works perfectly.

    How long will the cream last inside the container if not used for a while?

      7 day is the maximum amount of time something should be held after prepping.

    Can I carbon charge isomalt crystals in the whipping siphon?

      No. That will not do anything to the isomalt. If you are looking for something like popping candy that a manufacturing process. It is not just exposing sugar to CO2.

      We prefer to. For the pint size you can use 1 but quart needs 2

      @@Modernist_Pantry The video says that they were infused with N2O, not CO2. I don’t know of a special word for dissolving N2O, but that is not carbonation. To carbonate means to dissolve carbon dioxide (CO2) into a liquid.

      @@Dan.Willey There isn't a specific word for it, but most refer to it as carbonation since the effect is very similar to CO2 and it is readily understandable to everyone. But if you want to be pedantic...
