I don't really understand the use of the shaped tips in these applications. In each case, all they got was a blobby length of goo without any shape. When do the shapes make a difference and why would I use any of them?

Moe Rubenzahl A lot of it is down to the insane amount of stabiliser he’s using. Four leaves of gelatine? I don’t think I’d use that much if I was actually making jelly. A softer set will show the individual nozzles’ patterns off.

Question, why do you take the cartridge off before using the dispenser?

      Hi Lucy!
In addition to optical reasons, this has two further advantages, if you remove the charger holder:
      - The Whip will take up much less space in the refrigerator without the charger holder.
      - If the Whip is stored with the charger screwed on, the screw-in part can become rusty.
Best regards, your iSi Culinary Team

Do I have to clean the nozzle after every use ?

Hi, after the use there is still a little mass in the tip, which reacts to the air and will get warm like all other food, too. Therefor you should clean the nozzle if you're not using it for an longer time (e.g. if you put it into the fridge over night), but this depends on the mass you've filled the Whip with.
If you're dispensing the whole filling in one go (e.g. if you're decorating a couple of plates within a couple of minutes) you do not have to clean the tip after every dispensing.
