Because some people don't like too much spices and some people do like a lot of spices. so it is really depend on how we, as an individual, would like our "Berbere" to be (Spicy or not too Spicy). But my advice for all is not to add a lot of Rue Seed (የጤና አዳም ፍሬ ዱቄት ). since Rue Seed is very powerful and it can change the taste of your (Berbere). My other advice is less spice is better and to make sure not to burn the Berbere in the Oven. Let it dry slowly with a very low heat. Thank you, Tiegest, for asking this important question.

Selam Marti where do you buy the chili peppers. I live in Houston Texas. I need to make my own. Because when you mentioned to wash it, you reminded me of a recent news about berbrie. They say it has a very large amount of toxins caused by fungus as a result of humidity. And I forgot which country is was they are not allowing it to enter their country. I think it was Germany, England. My other reason is greed is pushing people to put other things. So to have a piece of mind, I will make my own. Thanks for sharing your knowledge.
I have another question: Can you freeze doro wat which has eggs in it? Can you freeze injera batter if you have a lot but cant use it all right away (time--not often enough time in the weekdays to prepare it)?
RT, You can freeze Doro Wat, without the egg for about 3 months. I never freezed injera batter in the freezer. But, you can keep injera batter in the fridge for a month, and before you make the injera, let it stay at the room temperature for at least an hour.
