Mindanao and Visayas Bibingka is different, it is made up of corn and cook with coconut husk. The other special one partner is Binaki, made of young corn. Usually, Puto Bumbong is mostly in Luzon area only.
Puto bumbong was originally made with pirurutong. A native heirloom black rice cultivar which becomes a deep purple-black when cooked. Also commonly used for biko. But since pirurutong is very rare nowadays, vendors are adding food color. I prefer the original recipes. Pirurutong has a different mouthfeel and taste. Chewier and has a kind of toasted aftertaste. Also: same thing with bibingka. The ORIGINAL bibingka does not use rice flour. It uses galapong, which is a traditional kind of rice dough used in a very large number of Filipino desserts. Very similar to the Japanese mochi. It is made with rice soaked in water overnight which ferments it slightly. In the morning, it is pounded into a paste-like consisteny. It can then be mixed with other ingredients (commonly coconut milk) to make various kakanins.
@AngryKittens. I was wondering if it was a regional difference, but my people are from different areas of Luzon, …. When Suesie mentioned “fluffy” I was surprised as bibingka to me from various preparers (relatives/friends/eventually commercial vendors here) is more as you said mochi or paste-like or gooey/kinda gel consistency.). The paste can vary from soft to quite firm. We cannot match the buko even though we can get coconut but it isn’t close at all; but the cheese topping varieties are excellent imo.
@@wintersojourn9356 I know. The "fluffy" bibingkas of the urban regions near Manila are simply not comparable to the original ones. I love the bibingka sold by vendors in roadsides in the rural provinces. Even plain, they're delicious.
@AngryKittens I luv the unique texture I grew up with here in West & make following my own recipe, just slight variations on a combo of my mother’s & a Tita’s. But I have an in-law who loathed our bibingka style which sounds like the traditional provinces of Luzon style .. he sed it is like wallpaper paste! But he didnt say that to our faces….he told our relative….who told us! (To each their own, more bibingka for me!)

Hello Susie. Next time you get bibingka, spread some fresh butter on top while still hot - before you sprinkle with shredded coconut. Take a generous bite and follow up with hot "Tablea" ( pure roasted fermented cacao pronounced Tableya). That's the traditional Filipino Christmas merienda.

The bibingka i missssed the most its been many years i didn’t taste the authentic Bibingka sa Pinas. When I went to PH Embassy, I saw one and bought but the taste like hard cake no Bibingka taste at all. 😔
