  • single layer carrot cake with cream cheese frosting
    in a bowl add:
    1 cup all purpose flour
    1/2 teaspoon baking powder
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    1 teaspoon cinnamon powder
    1/4 teaspoon nutmeg powder
    whisk
    10 tbsp unsalted butter
    melt butter in the microwave
    allow butter to cool down for a couple of minutes in the bowl
    in another bowl add
    3/4 cup brown sugar
    add the cooled down melted butter to the brown sugar
    mix
    2 eggs one at a time and whisk
    add dry ingredients to the wet ingredients
    mix until combined
    2 cups grated carrots
    fold in with a spatula
    9 inch round baking pan
    spray pan with non stick cooking oil
    you can also put parchment paper
    spread the batter in the pan
    bake at 350°F for 30 to 35 minutes
    allow cake to cool down before frosting
    cream cheese frosting:
    4 ounce cream cheese
    1/4 cup unsalted butter at room temperature
    beat at high speed for 2 to 3 minutes
    1/2 teaspoon vanilla extract
    1 cup powder sugar
    beat at medium speed until fluffy and combined
    once the cake is cooled down
    spread the cream cheese frosting all over the cake
    decorate with pecans or walnuts on the edge of the cake
