    Thank you so much!! I tried to make bread bread dough yesterday. What a mess. The dough went up inside the blade and tooknages to clean. I couldn't work out what I did wrong until I found your video. I will never ever put all the water in to start with ever again. Thank you again for posting this video.

    So Helpful, Thank you so much! We have just replaced our old processor with this model. The first thing we tried was Brioche (according to the booklet included) and had all the problems you said including the motor cutting out. I was thinking of sending it back to the shop. I noticed that there were also two mistakes in the Brioche recipe. I don't why they don't change the instructions. So glad you posted this advice!

    Great advice. When I tried making 80% hydration dough, the tip of the blade popped and I noticed that the dough had crawled through the blade to the drive shaft... Took me 15 minutes using a toothpick to clean up everything. I tried your method today, no problems at all!

      Same thing happened to me today. We just got our Magimix delivered and pizza dough was on the menu. It ended up everywhere and standing there picking dough off the machine bits with a toothpick was not cool.

    Omg thank you so much. I have just spent 20
    Minutes cleaning inside my dough blade after failed dough. The machine sounded like it was going to blow up.
    As you said I wish they had told me this before I attempted dough for the first time

      You are so very welcome! Happy I could help! Just make sure the max amount is 500 gr, according to google, that’s about 2 cups? Little more then 2 cups. With 500 gr I make a lot of little flat breads so you should be fine. Let me know how it turned out! You can do it!!

      @@DisDutch hi! Thanks for the reply! So I made the first attempt a few days ago and it was a flop-the dough getting stuck in the dough blade (what a mission to clean-haha). But I tried it again last night for pizza dough (I left out the egg and added 50ml oil instead) and it WORKED! Reeeeaaallllyyy have to add the water slowly-do not rush! I think that was my mistake the first time. Im just wondering how long the motor will last if I use the machine weekly to make dough?! The motor seems to get warm and works very hard 🤷🏼‍♀️

      yes my god yes, the water must be added bit by bit haha.. aaawww..sorry about the trouble you encountered by happy to hear you did it eventually! I don't think you have to worry about the motor. I make bread every week and thank god its still working and now during this month of fasting for me as a Muslim, I make sure we have smoothies at every dinner to get vitamins in...so I am using it every day and using it for the break every weekend and its still going strong. still loving it

    Hi Judging by the dates of the posts here I have come late to the party😂 However I have just bought the 5200XL Premium model and am hopefully going to be making bread. I would have been so disappointed if I had not known this. Magimix (this is my second after 20years) are good with the products and absolutely hopeless with demos! Thank you so much!

    This video was so helpful as I bought this machine and wanted to make Chapatti dough and got frustrated as the blade just started to spin and jam. I was so upset that I got put off and never tried it again! You given me hope now:)

    Interesting, I have a Magimix 2800 which I have used for maybe 20 years - the instructions that came with that follow the method you have described here using ice cold water. Never had a problem with pastry at all. Definitly good advice here

    I think the future owners of the magimix 4200 XL will be very thankful for this video! You helped them not getting frustrated and having to succeed by trial and error.

    When I heard you mentioning semolina, I immediately thought of semolina bread and how I love it...not only for it's taste, but also for it's low contents of carbs ( yes...I'm a diabetic).
    So thank you for the reminder I have to make semolina bread very soon again.

Semolina, my grandmother used to eat only semolina bread or corn flower bread. Taste so good and is better for you! I love that you make your own bread! High five!

    I have the same magimix machine and I made dough in my machine this weekend but because I am an experience cook, I just mixed the flour and butter together first, then I added the egg after the mixture was mixed well and then the water at the end but for those who are not experience would try to mix it all together so yes I agree with your comment😃

    Just made bread last night following your advice on my 3200xl. It was so easy and mess free. Thank you! I did find it didnt move on its own initially so i usee the food scraper a couple of times to push the dry ingredients down from the sides. As the dough blade isn't wide enough to reach the sides of the big bowl i was using. Perhaps I should try the medium bowl with it next time.

    You are so right. Just bought a Magimix and I can’t say I’m thrilled. The pastry (first lot) a disaster and did what you have shown here. Made second lot. Very crumbly but tasted nice. The recipe for the caramelised apple tart is wrong and everything I do or have done comes out runny not creamy. Any suggestions anyone?

    Thank you so much for this .. I’ve just bought a Magimix and was so disappointed - the instruction book is no help at all. I grated a block of cheese and spent half an hour cleaning all the parts ! Some of the grated cheese escaped from the medium bowl to the large bowl so both had to be washed plus the pusher thing and the discs. A piece of cheese got stuck on top of the grater disc Not sure it was worth it . Tried making scones they weren’t great either so will go back to making by hand. But your video has inspired me to give dough a go ! Thank you very much

      Am sorry. It’s sometimes difficult to advise as we all use stuff in different ways. We also have a bread maker machine , which has the option to have dough kneaded and let it rise in good conditions . If you happen to have one too , give that a try , at least for the pre staps (kneading and rise)

    First, mix dry ingredients well.
    Then very slowly add water. Watch little dough balls form.

    I tried magimix scone recipe and they were not great. Also the pavlova recipe was a failure twice an I’m used to making both. I’m glad I spotted your method before I tried the bread. Thamk you

    Works fine with my 4200xl putting the ingredients, flour, butter and yeast fluid in that order, then auto for a minute and it's perfect. So it works for me

    I have had my magimix 5200xl overheat and stop working when I tried to make hotcross buns. I added everything at once, it was a nightmare. I’ve been hesitant to attempt dough again. My 50 dollar stand mixer does the job without any problems!
    Next time I will try adding slowly. But to be honest I don’t think it’s the best machine for dough work.

    I like the close up shots of the video, really helpful in being able to see how the flour changes to a dough. All tips are much appreciated. In hindsight would you have liked to choose the 5200xl for a bigger bowl? Would be interested to know... thanks

      Thank you so much. Really happy to read I helped someone with this. My god the frustration I went through. We were actually almost on our way back to the store. But some voice in my head said, try this and if still no difference then bring the darn thing back haha. We would have loved the bigger bowl but the price difference was too much. So we convinced ourselves we don’t need a bigger bowl . Small family.

      One last question: do you find that foods tend to stick on the grid of your air fryer because I saw that you had to soak the basket after cooking, i know the small grid is not of non stick material, do you find that a problem in terms of food sticking to it? I’d like to get your opinion because I am thinking of getting the exact model here in Australia. Thanks

      oh yeah we did use to have this problem. then we went out and got some accessories for this hot air fryer. I found a website for you in Australia that has them. You can have an idea and maybe find them in your town. without these accessories making meals can get frustrating. and make sure to oil them before putting food on there. www.parts.philips.com.au/household-products/kitchen-appliances/airfryers/grill-pan-accessory-for-avance-collection-digital-airfryer-black.html

    I make dough with the ordinary blade. It does the job very quickly and no issues. Perhaps you need to show Magimix so that they can perhaps change the dough blade. I find the metal blade does an excellent job.

    5yr old video but still the MOST relevant reference! I had a disastrous first use of Magimix and it was exactly as you described! Need to be sure - have you made a brioche dough before? What would be the sequence to put the eggs and butter? I did notice eggs together with your dry ingredients… hopefully you are seeing this and will advise. Thanks in advance!

      Hey Jessie! I got you! 😄👍🏻 yeah you should be fine. It depends how much eggs you use and how wet the dough then becomes. But I think you should be ok. Just start with the dry ingredients first and add the wet ingredients really gradually and wait every time for the dough to gather itself. Good luck! Thank you for watching!

    I always make the dough BEFORE putting it in to knead, and have no problem
    But if it does get up inside the blade, immerse the attachment in water and microwave for a minute or so. This will cook the dough and the mess can be poked out easily, in one piece, or may even fall out

    Such a great video!! Thank you so much. I got my machine 2 years ago and then got sick and didn't use it til. now. Unfortunately my machine overheated before it finished. (5200xl). My recipe called for melted butter and water for the liquids so I mixed them together and followed your direction using that for the liquids. Maybe I should have added the butter first. What do you think? Also, my recipe was 2 cups whole wheat flour and 1 cup white flour; Do you think that might be a problem? Thanks for your help. Wish you lived next door and could come over for a visit!!!!

      Hey honey. Yeah in case of recipes with melted butter. I d add the melted butter first gradually like I showed with water and then continue adding your water is what I do and no problems. 3 cups of flower shouldn't be a problem. I think from my experience it's the order in which . Aaww if we were neighbor I d invite you over for a cup of coffee and making it together yes I love cooking and baking together and learning from others . Thank you for watching

    5 years late but I just used this (actually the 5200XL) to make some dough and I found it far too violent a device.
    They include a step down gear attachment but it doesn't fit with the dough hook. There's only one speed and it's fast.
    By the time it's formed the dough ball, it has imparted far too much heat into the dough.
    And I had the same issue with the dough clogging up the inside of the attachment. Unimpressed.

    Thanks for your video. I tried twice but I didn't get this to work yet in a clean way, unfortunately. I get to the stage where it forms a dough ball successfully. But as I add the last bits of water very slowly, there comes a time when the dough ball breaks and you have a big mess. My recipe contains 360g strong white, 75g wholemeal, 25g rye flour, and 290g water. It works fine for the first 260g of water I add. Any idea what I could be doing incorrectly?

      Hey buddy. So with the dough, when it becomes too messy and too sticky it means one thing; too much water. Even thought the same measurements can be fine for another. It will surprise you to know how much the same white flower for example from a different brand behave differently even if the quantity is the same.

    ive had success putting the dry first then the wet mixture in the bowl (milk, excluding butter), then letting the machine do its work. It worked fine.

    Very good tip and really appreciate. But my white dough blade of 4200XL differs from your black, on the inside. Mine is just a simple ‘through’ while yours, yes, it’s a little complicated. I don’t why the difference though. Anyway, I will follow yr advice. Thanks 😊

      DisDutch Tq again. How about sharing tips of creaming by the blade. How long do I need to cream for a butter cake. I seemed to be getting different advice. Some said cream between 2-3mins vs 15mins. But I noticed some used hand mixer unlike magicmix’s

      Yours is an older machine. The black dough blade comes with the newer models. I had the old Magimix 5200XL and it also had the white blade. Nothing ever got stuck.

    Thanks for showing! Have you tried it with the normal knive too? A chef from America's test kitchen said to use the normal knive for dough too, the plastic ones apparently don't work that well.

      I can honestly say that I did after one of our viewers like you asked and it ruined the dough. It kept cutting through and took all the fluffyness out. It just was wrong but that's my personal opinion

    I had given up on the dough hook before because of the problem identified in the video. Now I'll give it another go. Is broiche the only type of bread Magimix can make?

    While my wife makes a dough for SPECULAAS (=dutch season Sinterklaas-cookie) she also makes remarks about the poor mixing quality wich was not OK. Just before she was ready with the mix I found your marvelous HOWTO! Thanks for sharing man!
    By the way "Wat a time we live in", real time user on the spot assistance, just by someone not too shy to explane how he or she tackeled a problem. (Did you hear anything of Magimix yet?)

      @@DisDutch We veronderstelden dat er een fransman, danwel canadees sprak, maar aan de tekst hierboven is het native dutch(dis) ;-) Op vakantie in Brexitland jaren terug veronderstelden de locals ook altijd dat ik uit Canada kwam. Komisch toch?
      PS. Je real time filmpje was te gek, ikzelf overweeg wel een gimbal *(mag ik ook wel zeker gaan gebruiken, kijken of ie mijn Parkinson tremor er uit haalt.)
      En juist om dat het hier om het ff-wachte effect (of liever gezegd ff-volhoue) gaat zou je kunnen overwegen om volgend keer een klok in beeld te houden. We zijn immers zo gewend aan time-lapse en dergelijke.
      Was het eerste wat mijn vrouw opmerkte; oh ik vond dat het niet goed ging en ben toen maar opgehouden, jij maakt duidelijk dat je je van het gerammel niets moet aantrekken, keep up the good work!

      Ik denk dat wat het accent maakt is een mix van mijn Marokkaans en Nederlands tongval haha. Dat time erbij houden idee was eigenlijk wel handig geweest ja. Niet aan gedacht jongens sorry. Als je ook gezellig aan de UA-cam wil starten moet je gewoon doen. Het is leuk en zolang je er niet veel van verwacht is alles een verrassing en mooi meegenomen. En voor jouw Parkinson ?     Oh the first time I used my magimix 5200 to make a pizza dough, it was a big mess and I regreted buying my magimix. This video gives me finally hope.
    But still think that the fact of not having control on the speed is a cons.

      I have no idea how much stronger the 5200 XL is but so far we are very happy with what 4200 XL is giving us. and something bigger then this would cause trouble for us too with staying to store it haha

      If it’s just for the hummus, then it’s not worth the money. Honestly . You can grind / purée chickpeas another way

    Sincerely, I don't know well.. it's very very space eater, not so dishwasher friendly.. I really don't know.
    With dry or almost dry preparations, like also this, is very well, but other things(like the simpliest sponge cake).. I will try, if I'll brave enough!!😂😂

      Haha so far not problems. I must say: I prefer to mix cake batter with the old fashion hand mixer. But it could be done with this one I expect. It might whip the air out and ruin it though yes . Never tried cake with it

      In a week I haven'tried preparing a sponge cake.. but I made various things. 😁
      This new "little" toy is making me cook and bake a lot!😂
      After about two weeks of use I think I would better buy the 4200xl version instead the 3200xl I bought..🤔🤔🤔
      Btw, your tutorial was VEEEEERY important in preparing dough in order to avoid disasters!!!😂 I'm surprised too about the original recipes book..🙄

      haha why should we be the only ones to ruin our figure. we Mediterranean people love food and we have inherited our forefathers chubby genes. I (Hous) took a DNA test and guess what (we have a video here) my forefathers were Italian haha, no kidding, (they started in Gana, Africa, then Italy , then Spain, then Morocco where they stayed)

      I do that sometimes yes but I prefer an airtight bag or something otherwise the surface of the dough dries out a little in my experience and I don't like to oil the dough too much

    I just tried this with 1 kg of flour in the 5200- it started off great but then the dough came up and the machine over heated- do you know how to do this?

      1kg of flour is too much for the machine. The book tells you how much total dough weight it can handle - that's the flour plus all the other ingredients.
