    Try using a rocket type stove when canning out doors, more heat and much less carbon, burns much cleaner. love your show.

    Just watch a vid for green tomatoes late in the season. individually wrap them in newspaper and put them in a cardboard box for up the 3 week. they will ripen perfectly.

    To everyone asking about them, rocket stoves aren't always ideal for mass canning, even though they are more fuel efficient they can typically only heat one pot at a time. If you've got recipes cooking, jars and lids sterilizing and full jars canning at the same time a rocket stove just isn't going to cut it.

    You should try sunchokes. They are a native plant that looks like a sunflower.. They are also a very invasive weed almost. You eat the tubers. They keep all winter in the ground and are very prolific. To eat them treat them as a potato. Also they are yummy raw.

      Sunchokes are very good! They are also known as Jerusalem artichokes. As well as make pretty floers for ornamental as well as making food.

    You might keep your eyes open for another pressure canner so you can process more in a short time... you can fill the second while the first is processing.
    If you want to move the canner when full it can be slid, with just a little lift to an area off the side that is the same height.
    Also, I use scrap cardboard under the hot jars, it cuts down on wash.

    Friendly warning...a diet heavy in sunflower seeds can give chickens fatty liver disease. Pretty much like feeding a child chocolate. Of course they LOVE them but best to limit the quantity. Love the show!!

    Also, in canning, I found if you add a splash of vinegar in the water, your jars won't get cloudy on the outside.

    Could you in future video do a short session on how to trim the suckers on the tomato plants..so as to increase the yield...ther is nothing out there on that subject...:) Thanks From sunny Australia..:)

    If no one has told you if you put dish soap on the outside of the pots and pans .When cooking over open fire the black will wash off when done.

    Great videos. You should consider building a solar food dryer. You can store a lot more food and you don't have to precook most things.

      My wife is the expert but my understanding over 110 degrees destroys the nutrients and enzymes.

    I hope that isn't galvanized metal used for cooking grate, fumes are toxic, and sometimes cinder blocks used for fire pit explode. Good video, enjoyed the wood fired pressure canning.

      Most metals are toxic when burned. But its more of a hazard when they are being melted in a closed factory or smelter. Even stainless steal can be hazardous when heated at high temps. We are doing this outside with obviously plenty of ventilation. No worries. Thanks for the comment...many people probably don't know that.

    I am enjoy your video...i only wish you would add a resource list to each video. Example listing the name of the book you mention and the author and the pressure cooker....if possible thanks.
    BTW i am interested in homesteading but im wondering how do you deal with property taxes???

    Do you find that rebuying the lists all the time + the produce cost more than store bought ? FYI I live near stores like Walmart and what not. So I'm just trying to save a buck. Looks like a awesome transition for you guy's. Fermenting is one of my fave's as I don't have to have brand new lids.. I'm a super cheepiy ;P aka frugal. I hop you don't mind that I'm going to build the same fire setup :)

    Hey Zach, I was helping my parents with some canning and remembered this video. We were canning green beans on the porch with propane burners. But what I have a question about is why do you need to moderate the fire with the sheet metal? It looks like your caner has a weight gauge along with a dial gauge. My understanding is the weight gauge is set to maintain 5, 10 or 15 lbs of presser in the vessel regardless of how hot the heat is? We have a similar caner. And while we don't want to waste propane, we don't have to turn the burner down for the vessel to maintain the pressure we chose with the weight gauge. If we select 5lbs the weight gauge just whistles harder if there is more than enough heat to maintain that pressure. Obviously we will turn down the burner to save propane. Just curious. Thanks, Dave

      That is a good question David. The directions for the AA Canner say that the weight gauge should rattle no more than 4 times per minute or that means pressure is too high. So we use the sheet metal to cover the fire if its venting more than 4 times per minute. We've gotten pretty good with that.

    Love the show, but I'm curious as to why you haven't invested time in a Rocket Stove or rocket mass heater?? A rocket mass heater would be great duel purpose item for heating the green house in the winter and for canning. A few other people have asked as well, just hoping for some feedback. :) I'd be happy to send you PDF's via e-mail if you more info on the topic. Thanks a ton!

      +TheLeslie244 Rocket Mass Heaters don't work in a greenhouse. WE tried that. There just isn't enough insulation to make it work. In a home, they will work great...but for a greenhouse...nope...been there, got the t-shirt. MHPGardener has a great video out there on this topic and he addresses this.

    The Diamond Grip strut and sheet metal is Galvanized,,may not be the best for food contact cooking..

      We are in zone 7. We are on a 2250 ft elevation mountain top and the wind blows quite a lot so the temps are usually about 5 degrees cooler than forecast.

    She said her pressure canner holds 19 quart jars, & weighs 25lbs empty. I don't think that is correct. The 41-1/2-quart pressure cooker/canner holds 32 pint jars or 19 quart jars, and weighs 40lbs empty.
