Making Wings Using the Vortex on a Weber Kettle Grill

  • This is a video of my first use the Vortex on my Weber Master-Touch Kettle Grill. I have smoked wings before on my Weber, but they were no match for how they turned out using the Vortex. Beautiful color, crispy rendered skin, a nice touch of oak smoke, and juicy on the inside. After just my first time using the Vortex, I am already thinking of other creative ways to use it. It's a very simple tool, but extremely effective!

    This is the first I'm hearing of the vortex. I like it. I've been using this cooking method for at least 20 years now by just stacking the charcoal briquettes in the center of the weber grill the best I could. I do one more step than he did though. After basically baking, or in his case smoking, the chicken for about 45 minutes, I start moving the pieces a few at a time to the center over the charcoal briefly to get that crisp skin he kept mentioning. Then, when they're all browned up nicely and back to where they started I sauce them. Dumping the charcoal from the chimney into the vortex would make things easier. Nice.

    im un hospital righr now for an apendicites operation. have not had food for over 3 days now n no water and the worst part is i am a cook. just to let u know this looks amazing... will try it for sure.

    I've got an old folgers coffee can I use for my minion method ...think I'm gonna try this with the coffee can ...and just reduce the grilling area for the food

    i have followed your cast iron posts on youtube, facebook and instagram and it makes me so happy to see that you are using a weber kettle now too. cast iron and weber kettles are my favorite methods of cooking and everything you cook always looks great!

    The trick to really crispy wings is to add some baking powder to your rub.It causes a chemical reaction with the chicken skin.

    Try putting your wood chunks to the outside edges of the vortex. More smoke, wood lasts longer. Great video!

    I made wings using the Vortex and they were
    the most crispiest and delicious wings I've ever had, I just dry rubbed them and they took about an hour.

    I simply use their regular indirect cooking method with a coals on each side and I use a rib rack and stack the wings two high. I use Heinz 57 and honey put it on 20 minutes before I take it off. Absolutely to die for.

    Nice looking vid, problem is the video doesn't tell you anything about how wings were prepped and how long they were cooked.

    Just use an aluminum foil 13 x 10.5 inch deep pan. Cut out a medium size hole from the bottom. Turn over and fill with hot coils. That's your Dessert Storm style Vortex.

    How did you start your fire and put your charcoal in your vortex? Did you start your charcoal in your vortex or in a chimney and what type of charcoal did you use please?

    I love your content and your cast iron collection. I’ve recently made wings exactly like this in my 22” weber kettle and used hickory wood chunks. What an amazing flavor and texture.

    what type of grill are you using? my father grills on a webber and he teaches me his techniques. I'm getting my own house and I'd really like to get the setup you have. very amazing

    Just a suggestion, don't separate the flats from the drums........makes flipping them on the grill SO much easier!
    Just rip em apart when ready to eat!

    Are you using the Vortex on a regular sized Weber kettle? I have the Performer and was just wondering if the Vortex was a good "Fit" for it.But their website says this about using on the weber."Will not fit Kettle Grills sizes 18.5" through 26.75"

    Using this method did you rotate the position of the lid vent to draw smoke over all the wings during the course of the cook? Thanks.

      Good question. I was wondering the same exact thing while watching this. I think I'd rotate it 180 degrees after flipping them.

    The Weber is one bbq that does not need to be changed! We all need to learn how to cook on the Weber the same and not worry about silly little attachments. Nice wings sir.... but we can all do it without your Vortex and so can you.

    I bought a vortex and the grate with the removable center Filled the vortex as shown here. At the half hour mark they were not cooked. The heat was not intense at all. I used Kingsford charcoal. Started in a chimney and dumped in the vortex. After an hour the wings still were not done. Took them off and finished them on my gas grill. I have no clue why it didn't work. And yes my vents were full open. Please help.

      U gotta start with a few hot coals...... don't light up everything at once. And u can use wood like he did on top

    Can't find the vortex for sale in the UK, I might try just placing weber baskets in the middle for an experiment. If that doesn't work I might try a large tin can with both ends cut off.

      You can use a bowl-pot stainlees steel in a flea market good will o salvation army. $ 1 0r 2 dls, Cut or make some holes in the boton. Now you have the vortex.

    Great looking wings and a well made video, too. Will definitely have to check out a vortex. (it would be superb for searing a steak!) How did you have your vents positioned and/or what temp were you smoking at? Thank you.

      I did it with vents wide open. 30 - 40 minutes total time. Mine got up to 500 degrees F according to the therm on top. Came out just like the video. Save saucing to the end of cooking to let skin get crispy.
