    Looks awesome! My brother just sent me about 10 pounds of halibut from alaska. I'll definitely try this recipe.
    So far, my favorite way to eat halibut is with a good beer batter & a dill sauce I made. I know, people say it's a waste of a good fish, but that's how I like it.

    Fresh halibut alone taste amazing. If I season it, I would keep it simple with sea salt and Macadamia nut oil 👍

    Great presentation, most people including myself have no idea what fresh caught Halibut tastes like. It's not quite the same as the stuff we buy in the seafood section at out favorite market. Believe this when I tell you a Chef on an Ocean going vessel knows his craft! Chef Mike this dish looks outstanding! Just a side note good quality Halibut can be found at many of the better supermarkets. This is not a fish you want to screw up, by not cooking it properly! Slow and easy that's the way to do it, slow and easy. Buy fresh ,Eat fresh ,Be fresh!

    OMG, ready to cook up a 14 oz chunk of Halibut flown into Denver yesterday afternoon from Alaska. Can't wait to pan fry it with butter and veg. oil, salt & pepper and maybe some lemon. Yum!

    In response to the negative comment below..That is not smoke it is boiling water on the stove. This recipe is fantastic. I am a big rosemary fan. The salsa is a fabulous fresh touch!

    If you're ever in Juneau, Alaska, try the Halibut at the Breakwater! Or ANY of their DELICIOUS seafood! Their King Crab Legs are AMAZING!

    Tried this tonight - GREAT - I went a little longer after searing took pan to 600 Degree Grill and then flipped. Turned out very moist, perfection - Love the Topping as well, went with herb medley rice, and broccoli with fresh garlic. To the flour I added a cilantro/onion/garlic powder mix, and onion powder with dried chive, and crushed fresh rosemary. - VERY VERY GOOD.

    My go to flour garlic powder. Paprika , hys seasoning salt dash of pepper.the paprika has a lower flash point so don’t over cook or or burn.

    I love the fact that, at the introduction of Chef Mike, Skippy peanut butter is visible in the cupboard in the background. That said, I am going to try these techniques.

    I would use avocado oil it has the highest smoke point and it tasted the best

    First time I see a cook/chef using canola oil versus "extra virgin olive oil". I've always questioned people using evoo ON EVERYTHING, FOR EVERYTHING!! Different oils for different applications is best, no one oil can do all jobs but, evoo sounds cool I guess ;-)

    This recipe is perfect. Followed it couple nights ago. Fancy? With rice and all the shit talking. Why don't you spend time eating canned tuna. half of you probably can't cook.well done what an ignorant comment go to the supermarket and get some Gordons fish sticks and leave fresh fish cooking and eating to fisherman

    Here is something I PROMISE is important. If the oil starts to smoke, it has been destroyed and you need to pour it out and start over. My neighbor DIED from inhaling too much oil--a form of cancer you get that way. IF you wear glasses and see any oil forming up on the lenses, that is another indicator--be careful when you fry, I for one have done it wrong, wrong, wrong for too many years.

      Smoking oil is not cancerous. Certain oils have a different burn point.

      Huge favourite in California. We broil it with a little butter and lemon or lime. It has a beautiful taste on it's own.

      Canola oil is great for frying fish, it's not about the flavour of the oil it's about the flavour of the fish. Guessing that halibut had a higher iq than you

    I like fish cooked and not medium rare. I cooked yellowfin tuna and it was dry and tough.
    How about the Halibut? Will it be OK or will it be dry and tough if I cook it through?
    Anyone know?

    He cooked this fish medium rare. I cannot eat raw fish. I would cook it longer so that it is done throughout the fish.
