I only had Masala Dosa in south India, in my 7 month journey, and it was SO AMAZING that I can still remember it clearly, and my mouth becomes watery as I just think about it - after over 25 years now. I ate it in Udaipur, and it was not rolled but instead folded like a triangular hat - the Alu-Masala wat stingy and very spicy and hot, and the masala-dosa itself was quire loaded with ghee - I think they drizzled much more than you do here over it, but of course- I never saw how it was cooked - I only ate them. 2 of them (they were VERY LARGE) every breakfast!!!

I almost gave him a dislike for that, but I gave him a like because he was so nice and did show everything else in detail. I hope he will print the recipe for the dosa dough.

Thank you for the recipe and explanation of preparing it. I have successfully made them after some experimentation. There are some techniques that are crucial to cooking the dosa that an expert in making them would have missed. 1. I used parboiled rice as the people in Kerala do. 2. It doesn't matter whether you use spoon/ladle to spread the batter, but ensure that the underside of the spoon is covered in the batter. This prevents the batter being picked up from the pan/tava. 3. Another point is the separation of the dosa from the pan/tava. This is cleverly achieved by spraying some oil on the cooking dosa. This oil creeps under and caramelises the surface of the dosa facing the pan, allowing easy separation from the pan.
I followed your recipe and made dosa at home..for the first time i was successful in making perfect dosa..i wish i could have shared the photos. Everybody liked it sooo much and i was super happy☺️☺️

Hmmmm interesting. This is called canjeero in somali and is very common in somali cuisine. What makes this even more interesting is that somali people used to trade with Southern India and Sri Lanka.
