Do you get different gear for your character in this game? Or is it just what you pick when you customize your character at the start?

There is different gear you can craft for yourself in the game as you level up

I have the Daedream Necklace, is there a way to turn it off? It's great in general, but makes catching Pals a pain

No you cant turn it off. You have to take them out of your party

No all the pal equipment does is allow access to the partner skill. You don't physically see it and you only need to make one of each. If you are talking about your gear, then you can hover over it and either use the move button (y on controllers) or drag it to your inventory.
