Yes, you are genius! Just made and ate it. Husband says it's THE BEST fried rice I ever made for him hahaha Actually he said it's THE BEST fried rice he ever tasted, even better than the ones from restaurants using wok with high fire.
My OCD went ballistic when you put the egg in on the rice arrrrgh. A great alternative to using day old rice is the ready cooked 90sec microwave pouches of rice. The moisture content is perfect for a Wok fried rice. Ps, Add a teaspoon of water to the egg when you beat it up for a fluffier egg.
Why would anyone dislike this? Fried rice is always amazing no matter how you do it. There's no right or wrong way to cook it.

I always cook the egg first till Barely done remove from wok and add at the end . To prevent over cooked rubbery eggs 🤘🏻😎🤘🏻

I use a stone mortar. And I use a coarse Korean salt...most similar in texture to flaky sea salt :-)
