Captain Tristan Mortlock is an award winning Super Yacht Captain with over 15 years experience. He started his yachting career in his teens and now runs one of the most successful charter yachts in the world. Tristan is currently serving on Motor Yacht AWOL, a San Lorenzo SD122, built in 2009. AWOL is a multi award winning yacht and her crew take a lot of pride in their work.
Captain's Vlog is about educating interested parties on what happens onboard a Mega Yacht, Super Yacht and the yachting industry. To share the life of yacht crew and life at sea. The BIG shipyard refits, paint jobs and marine engineering works. To travel some of the worlds most beautiful destinations.
The first owner of the Super Yacht AWOL was non other than Mr Piero Ferrari himself. The wheel house still contains the original Captain's chair with the Ferrari emblem.

The thing that makes your videos so good is that they are authentic, for example the micropause during this video when someone talks over the radio and everyone become silent, listen to the message, answer the person over the radio and then the show continues, this is what makes the show autenthic and real! Awesome! Keep up the good work!

You have true class in the way you interview your subjects in that you allow them to talk uninterrupted and stay out of their way. Not even talk show hosts have that kind of class and style!

A relaxed Chef makes for good food - and you have a relaxed Chef who clearly knows his profession. Well done James!!
Plus, as Skipper, you clearly have a good understanding of what makes a team work when they are dealing with demanding customers who, quite rightly, expect value for their money.

Having worked on several Warships both big and small it's interesting to see how many of the aspects of how your galley operates is very similar to how a small patrol boats galley works, the rich and famous being the Captain and his Officers. very interesting video.

Being married to a man involved in the supply side of food, I totally loved this video! He will be in multiple establishments in a day; a Mom & Pop establishment with simple home-cooking, a beach bar, fried seafood establishments, and fine-dining restaurants. Not all chefs like non-essential people (much less cameras!) in their kitchens, so thank you for letting us have a peek!
It's all the timings a chef has going on in his mind, one stupid question can throw the thought train and the meal is ruined. I've had that's done to me so often and I'm no chef let alone a cook, if it turns out OK that's a huge bonus if it doesn't the dogs happy.
You are an amazing Captain surrounded by an amazing crew. James is an incredible chef and cooking on a yacht with limited space is certainly not easy especially when you have "very demanding" clients. Many of them have no clue what good food taste like! Cheers to all on AWOL!

That was a fantastic video. I'm in Charleston South Carolina where everybody wants to be a chef and we have so many James Beard award-winning ones. I can't imagine being a professional chef like the one that you had him working in such a small space and like you said you can't run off at the store when you need something. The chef's job may be the most difficult job on the boat. I'm sure some people can be extremely difficult to please, especially when they are paying a very high price for a charter. I like comment Chef James made when he said, "They say they eat everything but they don't." I think we all understood.

Wow, I really loved this video, so much hard work to keep us spoiled people happy. 10:30 in the evening and then up early morning, the planning that goes into it is just mind blowingly hard.
One thing I have to add is that many many people claim to be chef’s, but are only capable of working 1 section at a time, I have no doubt you guys have the skills and ability to work any section you need to, even as a kp. Well done!

Great video as always and the dishes looked really delicious. As a fan of explorer/expedition yachts philosophy I found the 3 days provisions quite low but for a white yacht I guess that will be no problem to replenish its inventory.
P.S. I loved the little basketball in the background.
Since most of the food should be really fresh I don't think you'd want to keep more than 3 days in stock even if you had the room for it

You should make a playlist starting with vlog 1. I watched many older videos over the weekend and in order to watch them chronologically you have to start each and every one of them manually.
Having spent 40 years in kitchens in the US, Middle East and Europe, some, the last 9 years in Relais & Chateaux - Relais Gourmand, hats off to Chef James. Don't k now that I could have done what you do. Great that the relationship between you and the front service is so wonderful. Really helps the overall experience for the guest. Congrats on your award and that fantastic knife.

Just came across this channel. Fascinating information. I see elsewhere that AWOL spends all it's time around the Mediterranean, so was pleasantly surprised to see the March Madness poster in the galley.

Just found your vlogs last week. Really enjoy them. They are real and show the things that I, and I think a lot of other people enjoy watching. Two suggestions, first the when you are talking or interviewing someone, the background music can be bothersome, second try a chest mounted or front clip on go pro in lieu of the head mounted. A person knows when they are going to turn their head and the eyes and brain adjust to reduce the fast jumping effect. Watching the video almost makes one dizzy.

shout out to the music selection. I don't know if it is over the P.A. or just for the galley. Some day I will dine on the AWOL. I am about flavor more than presentation. I will try anything. If I was aboard the AWOL, I would give the chef full reign on whatever he sees fit. I am not picky, and I've never not respected, or liked a dish I've been served.

The most important thing to consider working on a super yacht is while seeing to the needs & wants of the owner and VIP guest's verbal communication kept at an absolute minimum and soundlessly. and the one word never used is no, all of their desired witch's must be catered for in an impeccable fashion.
