    Ingredients
    300 -350g pineapple chunks
    4 Tbsp Kaeng Kua paste or red curry paste
    2 cups coconut milk
    1 cup unsalted chicken stock
    3 Tbsp dried shrimp
    1½ Tbsp chopped palm sugar
    1½ Tbsp tamarind juice
    1½ tsp salt
    2 spur chilies julienned
    5-6 makrut lime leaves or kaffir lime leaves
    1 piece makrut lime
    10-15 pieces medium sized shrimp, deveined
    Jasmine rice for serving
