We are back with a brand new weekly dinner video, and we are celebrating the end of the Tokyo Olympics by cooking up some very western/Americanized versions of Japanese food (we started last week with yakitori!). Also, we are sharing the rest of our meals for the week, plus some fun events we've had going on. We hope that these weekly meal ideas help you with inspiration for what to cook at your house, whether you are cooking for one, cooking for two, or cooking for a crowd!     Great Japanese cooking Stacy! My daughter-in-law would be proud of you. She makes okanomiaki with leftover meat especially at Christmas. I don't think she puts egg in her mix and she never rinses the cabbage. Everywhere in Japan has it's own version! Miso with tofu is the best. It usually has a bit of seaweed in it as well. Your stir-fry is just the way I make it. We call Coke etc soft drink here in Oz. Happy birthday Hunter! Happy day to you both from Sally, Les and the fur crew! 😊♥️♥️

I'm so glad that there weren't any horrible blatant errors on my part, in trying to make some American-ized versions of Japanese dishes. We really just wanted to have fun with it, and to do the Olympic host city's theme of food. We don't have hardly any Asian groceries here, so my available ingredients are fairly limited, and I had to work with what I had. I would have totally added some nori or seaweed to the miso soup, if I could have found it anywhere. I did see several different recipes for okonomiyaki when I was Googling, cool to know they are regional and different from area to area and probably family to family. The ones I made were really good (except for the leftovers, which were not nearly as good heated back up the next day). Hope you and Les have a fantastic week ahead!     Hi Stacy! Great job with the Japanese meals! You were pronouncing OKONOMIYAKI very well! 😊 Just One Cookbook with Nami is a great resource, her UA-cam channel too! There is another version of Okonomiyaki (Hiroshima Style) that incorporates the Yakisoba noodles that you made that is a good version of Okonomiyaki too. The version you made is Osaka Style Okonomiyaki. I do think it's such a neat idea to try to make dishes in honor of the Country hosting the Olympics, maybe I'll try next time... 2022 will be the Winter Olympics in Beijing and the next Summer Olympics is in Paris 2024.       @JuJu Bi - Hey JuJu!! Aww, thank you so much for your info and feedback, and whew! I'm so relieved that it wasn't horribly mispronounced or the food not horribly wrong, I do try to be as authentic and sensitive and do it as much justice as I am able. Finding ingredients here is not that easy, as we don't have a large asian population where we live, and really no speciality groceries or areas (and our Kroger and Walmart is not well stocked on the international aisle, for asian or most other cuisines either, LOL!). We definitely had fun with it, and enjoyed everything we tried! My sister has done this for many many years, and has always enjoyed trying to cook cuisine from the host country. I hope you get a chance to try something for the upcoming Olympiads, and that you enjoy it too!! Thanks again for being so kind and thoughtful, we certainly appreciate it!       @Jenny Williams - Hey Jenny!! Thank you so much for stopping by this week and watching! Yes, everything that we tried in honor of the Olympics turned out really well, and was quite tasty! The only downside is that I made 4 okonomiyaki (savory pancakes with cabbage, shrimp and bacon) and they really didn't heat up well, so they were much better to have fresh off the griddle. We still ate them though, but that was the only less than stellar point, just the reheating. We are both born and raised in the south, so to us, we don't have that much of an accent, but I know from years of watching other people on UA-cam, that we do have quite a southern accent, or drawl, both of us, LOL! Tim LOVES turnip greens, but I do not, so you don't see those often here. We both love grits though, something we both have eaten our entire lives, so that's very normal for us, and you will see that often!! Hope you're having a great weekend! I never attempted breakfast, just some more westernized or American-ized versions of a few Japanese things. They were all good though, and fun. And girl, I have plenty of instant dashi left, so I am happy to mail it to you. Just send me your address!! It smells pretty strong, but it has a good flavor. The miso soup was pretty spot on to what I've had in a restaurant many years ago (I got the white miso at our Kroger). Hope y'all are well, and that Kelly is improving.     im pretty sure tims allowed to say kick it up a notch.and even if its patented which ive never heard of a phrase being .Looks good Stacy .expect i wonder what u could use instead of oyster sauce.and im kinda scared of some of some Japanese packaged stuff .well cause im allergic to shellfish.Have a BLESSED week you two.

LOL, Tim and I are just teasing each other, because I think it's always so cute when he says "Bam" or "Kick it up a notch", like he's trying to channel Emeril Lagasse! We just tease and banter, just all in good fun :) I eat most seafood except oyster sauce, and to me personally, it doesn't taste all that much like oysters or too fishy. However, being an island nation, there is a lot of seafood and fishy aspects to Japanese cuisine, so if you are allergic, it's probably best to steer clear. I know the instant dashi flakes that I ordered from Amazon smelled and even tasted, a bit fishy, so those would probably not be safe for you to try. We are absolutely taking every chance we can to spend time with family, friends and our church family. We are eating out as much as we can, visiting, going to events and parties, and everything we possibly can (since none of us know what tomorrow holds and if/when we might have to go back to a more restricted way of living or a lockdown again). We had fun with the themed food for the Olympics. We did this 3 years ago for the Seoul Olympics and had fun with the Korean food too (my husband Tim was stationed in Korea for a year when he was in the military so he REALLY enjoyed that one!). Have y'all moved your daughter to Oxford yet? Our friends moved their daughter to Starkville to start as a freshman at MS State this past weekend. Empty nesters now!       @@LetsCookYall sorry I’m just now responding. Last week was crazy busy. We moved her in yesterday. 😢. We still have one more at home. He started 8th grade last week. He plays football so that keeps us busy this time of year. State is a great school too, just not as good as Ole Miss. Lol! I took Organic Chemistry there one semester in summer school trying to fit everything in and have had many family members go there as well.

    Hi Stacy and Tim some really interesting meals this week. Everything looked good. I try to make some sort of stir fry once a week my daughter loves food like that. What a sweet boy Hunter is. Love the red hair. Thanks for sharing have a great week.

    Hi, Stacy. Funny coincidence, I've been watching Japanese "salary woman" vids which include lots of cooking. One thing that surprises westerners is how often Japanese cooks use ketchup. They also frequently eat rice, soup and grilled fish for breakfast. Sounds good to me.
    I don't know if dashi is anything like fish sauce, but that stuff will put you back on your heels! lol And wasabi hits you on the back of the tongue and then roars up through your nostrils. Your eyes will either water or bulge! The birthday boy is such a cutie! Thanks so much for sharing your week with us. (:

I'm actually really amazed to read your comments about the ketchup - I thought the same thing and wondered over and over if I was choosing recipes (from Google, no less) that were just totally American-ized or westernized because there was so much ketchup in the sauces! LOL! Dashi is good for making stock, and has a bit of a fishy smell (more) and taste (less), but it was fine for me. I don't dare try wasabi as it's enough for spice-loving Tim, LOL!! I'm not a ketchup fan (I don't even put it on my hot dogs, hamburgers and rarely dip my french fries in it), so that doesn't appeal to me at all.     Happy birthday to Hunter! Your food looks so pretty and well plated! Aww you're welcome on the Olympics themed food, really Elizabeth is the one that got me started doing that years ago but I have more fun with it than Don does! We really liked the Okonomiyaki too and today Don told someone he liked the udon noodle dish I did the best :) Your dishes all look awesome. And the burgers look really good, hard to go wrong with that. Great job on those amazing looking onions! Happy eating this next week! P.S.....I say coke too but we are related, and I rarely drink them anymore

    We have finally started using our air fryer! Cooked some store-bought fries the other day that turned out PRETTY good except some of them were still a little under-done so we'll have to play with the times a little bit but it DID turn out good!

I always liken an air fryer to a new grill - they cook differently between brands, in how hot they get and how fast they cook. It is a bit of a learning curve, but it's just so easy to pull them open and check on the food, and flip and rotate or turn or whatever if it needs longer. So glad you are off to a great start!
