I tried various classic whiskey cocktails using bourbon and regular pickled mushrooms as I once bought an overstocked pallet of gourmet products that had 3 full cases of pickled mushrooms in gallon jars. I particularly like my version of a Manhattan using sherry, orange bitters, and a mushroom garnish.
This is awesome! I’ve also been developing a mushroom cocktail, but took a tiki route. This sounds freaking delicious! The garnishes and the ice are next level. Bravo 👏

I’m writing a new cocktail menu at the moment, and am actually making a Lapsang Soochong Syrup for one of the drinks, but have just been bringing the water to the boil and letting it steep for about 10 minutes. Have you got any tips on how I might be able to get the best results? Sadly I haven’t got a fancy tea timer like you!
I would recommend dropping the heat before it comes to a boil, green tea can burn easily. For a strong syrup, I always recommend using more tea, not more time. Steeping for too long can lead to off flavors. Cheers!

Hi, Sofie. Spice bitters are really hard to find. You can substitute them with lemon or lime bitters. With those, you will get great results too. Thank you and best regards to Belgium!
Loving your martini recipes, my absolute favourite cocktail, theres nothing quite like it. I wonder what you think of Luis Buenel's martini recipe? Its super cold, super dry (with just a wash of vermouth and bitters) but shaken (not stirred)
Thank you! I love Martinis. I do like less vermouth in mines but in 5:1 ratio of spirit/vermouth. I am not ok with shaking it. I prefer prebatching it and put it in a freezer for a super cold result.
Next time I have a nice sake opened, I'm trying it out! Since I only have regular soy sauce, I'll mix it with some dashi to reduce the salt and increase the umami. And will use shiitake instead of porchini to stay more Japanese ;) Love your crazy recipes tho, so inventive! Can't wait to see what you have next! (still waiting for one with absinthe tho)

Seems pickled mushrooms (without oil) is not a thing around here. We seem to only have marinated mushrooms (in oil). Would this substitution ruin this cocktail?

I didn't make it myself, but I've had a drink made with mushroom infused cognac before and it was easily in my top 10.

I have been making sake martinis for years using pink pickled sushi ginger as a garnish. I like your idea of using green tea ice cubes.
