Ingredients
1/4 cup olive oil or more
6-7 fresh leeks
2-3 scallions, thinly sliced
2-3 garlic cloves, grated
1 onion, finely chopped
2 cups Arborio rice
5 cups water or broth
1 teaspoon dried dill or 1 tablespoon fresh dill
1/4 cup fresh lemon juice or to taste
2 teaspoons salt
freshly cracked black pepper to taste
Instructions
Cut the dark green portions off of the leeks and discard them. Cut the leeks in half and slice into half moons. Place them in a bowl of cool water and swish them around. The dirt will sink to the bottom.
Lift the leeks from the water and place them in a stariner to drain. If they are still dirty, rinse them one more time and drain.
Add the onion and olive oil to a large skillet and cook over medium-heat until soft and golden.
Add the leeks and cook until softened. Season with a pinch of salt.
Add the garlic and warm through for a few seconds until fragrant.
Add scallions and cook until softened. About 1 minutes.
Add the rice, water, salt, pepper, and lemon juice. Bring to a boil. Reduce the heat to low and simmer for 15 minutes.
Add the dill and toss together.
Serve with lemon wedges and drizzle with some Greek olive oil. Kali Orexi!

So hungry just looking at this dish...yum!
That is my favourite dish! I like your recipe!!❤❤❤
Dear Dimitra.......I am so grateful for your including so many vegetarian and vegan (adaptable) recipes. I come from a Lebanese background so what you make is definitely swoon worthy to me. I've already made the potato/tomato/pea stew and shared it with friends who have also loved it. As a primarily vegan/plant based eater, it is always a challenge to include protein without resorting to processed products. I wonder what options you might suggest? Thank you for all you do.
Love this dish!
Thank you dimi❤❤🎉🎉

Yia sou, our lovely Dimitra! I couldn't quite remember how to make prassorizo. Is it the same method for using spinach instead of leeks? Your recipes are always delicious --- thank you!♥🇬🇷
I love prasorizo, I make it alot. I use the dark green part as I don't find it too tough. I will definitely try your version😊

Thank you, Dimitra.
I too was thinking, crumbled feta would be great on top of this. 😊
This looks very good 😋
looks delicious!
Feta on top would be good 😋
This might sound like a silly question, but can you use the dark green portions for a medicinal remedy? I already know you can use the dark green parts for stock.
I absolutely love your recipes. I wish you got more viewers on your channel! I have tried so many recipes and have absolutely loved all of them. Thank you for all your recipes!
👌👌🌻🌻🌻👏🏻👏🏻🙏🏻
I LOVE YOU! YOU ARE SO BEAUTIFUL!
Happy Mother's Day Dimitra Thank you for improving and adding more variety to our cooking 💝 My Greek inlaws and husband are so happy 🌷🌷🇨🇦
Looks great! I’m definitely going to try this recipe.
When I was growing up, my mother used to make “pilaffi me kota”, a pretty simple tomato-based pilaff with bone-in chicken pieces. Are you familiar with this dish and have you already made a video about it? If you know the dish but haven’t made a video yet, I hope you will soon!
I am visiting Alanya Turkey right now and they have a very similar dish to this except they added carrot to it👍😋😋👌💃🏼
This looks very good 😋
Best Greek recipes! Thank you for posting, you've become my family's favourite!

Looks delicious 😊
Oh yummy 😊😊😊
Great recipe!
I'm not a fan of dill, Dimitra. What would you suggest as a substitute? Thyme? Marjoram?
Some fresh parsley in the end is delicious and fresh! A touch of mint too 😀
@@DimitrasDishes tks!
Always add Feta!
For sure! 😆
No brown rice!? 😔
I recently learned that brown rice isn’t as healthy as we though… and white rice tastes so much better 🙂
@DimitrasDishes it does....but until my dietitian okays white rice...I'm mostly stuck with it
@DimitrasDishes I did make your cabbage an chicken dish with brown rice, though! I left you some comments, bc there was info missing on the web page. Thank goodness for the video!
