In another video, it appears the boat suffers from massive torque effect (rolling) when the motor is engaged full throttle.
I think the problem you are having with your *scale model boats* is that you are not operating them at scale speeds or in a scale manner. The real boat, like the Tuna Clipper, cannot turn its rudder to "full lock" in 1 second, it takes time, but a full rudder turn in 1 second at over-scale speeds makes the boat react violently....

Did you close or seal the "scuppers" on the side of the hull, so when the water rises higher than the waterline, it won't come in and flood the hull?
Scuppers all sealed but that didn't exactly save it sadly.
