    Shine an ultraviolet light on a tub of crab meat and any shell fragments will “glow” white, making them incredibly easy to remove.
    What you’ll need:
    - Black light flashlight
    - Sheet pan
    - Dark room
    - Tweezers (optional)

    Common fish parasite Anisakiasis also glows under black light. So in Japan here it's actually recommend to blow black light on unsafe fish before eating raw

    This is something we had to do in the walk-in with the lights out before service whenever they’re was crab on a dish

    Technically you want a UV light, black lights are done with filters… Take it with you when traveling… you’ll be able to see how clean your hotel bed & bath are….warning, you probably won’t like what you find

    Your mistake is using scissors. Get one of those shell crackers and you'll break the shell without shattering them into a million pieces.

    You only needs cracking tools for the claws and joints ( if you really wanted to get the meat from those)
    better crab cracking and eating techniques just dont produce shell fragments

    I don't eat crab, but not need light, just blanch (1/3 cook), then crack. Finish cooking.
