It's interesting that you were in food service and continued to enjoy it. I was in food service and hated it for a number of years.
We build burgers far closer to yours than your sous chef, but I also add a little Hoff's Wake Up Call hot sauce.
I think what's helps me still enjoy the burgers from my college food service days is that I worked for a small business and not a large fast food chain company but who knows maybe I just love a good burger.
