Oh btw, don't worry about the meat being pink. They're fully cooked. That "pinkness" happens during the natural course of the cooking process. Most people like that color. 🙂
That's the "smoke ring". You see it around the edge of all BBQ but the ribs aren't as thick as the brisket so the smoke ring makes its way all through the meat. I am so jealous and I want ribs now!
The best meal I've ever had was at Franklin's Barbeque! They open at 11:00 but we got there at 7:00 to be sure we could eat before the food ran out. We were not the first in line either.
you must have taken the old road into Lockhart. The toll road there is the fastest in the US with a posted speed limit of 85 MPH (137 KM)! Since Texans consider that to be a suggestion, you will get run down if you do ONLY 85! Too bad you missed that. There are numerous BBQs in Lockhart that are amazing. It is the BBQ capitl of Texas

Certain States/cities are renown for there BBQ Texas is one of them, Kansas City Missouri is another etc. Pork needs to be cooked well, Beef doesn't matter if your mashed potato's aren't turning pink your doing it wrong with Beef.
