    Peachy Baby Back Ribs Recipe
    Ingredients
    2 slabs baby back ribs (Compart Duroc Ribs is what I used)
    ¼ cup Killer Hogs The BBQ Rub
    ¼ cup Heath Riles Peach Rub
    1 cup Peach Nectar
    1 cup water
    ½ cup Apple Cider Vinegar
    1 stick butter
    ½ cup brown sugar
    ½ cup Kosmo’s Peach Jalapeño glaze
    1 cup Killer Hogs The BBQ Sauce
    1 cup Peach Preserves (melted)
    Directions
    1. Prepare smoker for indirect cooking at 275 degrees using peach wood for smoke flavor.
    2. Trim and remove membrane from two racks baby back loin ribs.
    3. Season with The BBQ Rub followed by Peach BBQ Rub.
    4. Let the ribs rest for 30 minutes while the smoker comes up to temperature; then place each slab on the pit.
    5. Combine the peach nectar, water, and apple cider vinegar in a spray bottle and spritz the ribs every 45 minutes.
    6. At the 2 hour mark remove the ribs from the pit and wrap in aluminum foil. For the wrap add 1/4 cup light brown sugar, 1/4 cup Kosmo’s peach/jalapeño rib glaze and 1/2 stick of butter cut into pats. Place the ribs meat side down back on the pit.
    7. Continue to cook for 1 to 1 1/2 hours or until the internal temperature reaches 202-204 degrees in between the bones.
    8. Carefully remove the ribs from the foil wrap and place back on the cooking grate. Glaze the ribs with a mixture of The Bbq Sauce and Peach preserves. (Warm the preserves in the microwave before mixing with the bbq sauce)
    9. Let the ribs glaze for 15-20 minutes or until the sauce sets.
    10. Remove from the pit and serve.

      My Q game improved significantly when I started watching Malcolm. So I started using his products to pay it back a bit and have kept doing so because they're all so good. His Grande Gringo, Memphis style Q sauce and hot sauce in particular are fantastic.

    When I bought my first smoker 2 years ago, I had no idea what I was doing. Malcolm was the first person on youtube i found that explained things in a clear detailed fashion. He really sparked my passion when it comes to bbq and cooking; this of course led me into a rabbit hole of cooking, where i started to look for higher quality meats, ingredients and even learned some basic butchering skills. I'd love to shake Malcom's hand one day.

    Malcom has taught me the key to success with the grill. I learned all from watching these videos. I have taught family members and friends his methods.     One of my all time favorite spritz's is the peach cider you get around the FL / GA state line tourist trap markets. Peach is one of the best flavors to compliment pork ribs / baby backs. This just took it to the next few levels.

    After you wrap the ribs, since smoke is no longer penetrating the meat, you can shift them to a oven and have the same results correct?

    True confession. Born and raised in the 901. Been to a lot of Memphis in May, Mid-South Fair and Southaven Springfest competitions, I have never cooked ribs. Cooking about 6-9 racks this weekend on my new Traeger. When I get the hang of it, I might step up to an offset. I see your seasonings and sauce in all the Krogers around town. Good to put a face with the brand.
    If it's from Memphis, I know it's good BBQ.

    I've got some questions about smoking in volume for a food truck.
    1. Is it better to use wood or pellets for smoking?
    2. What are the advantages of using a dry rub over a rub with a binder or vice versa?
    3. Are there some herbs and spices you shouldn't (for flavor reasons) use on beef, pork, and chicken?
    4. Can you use the same rub for beef, pork, and chicken?
    5. Is there a "standard" set of spices to use as the base for a rub and then add to it to achieve the desired flavor?

    I've done this recipe a few times and it is a hit. In fact I'm doing them this weekend for a big family gathering. I haven't been able to find Heath's Peach Rub in the stores but I ordered it and I'm going to try this peach rub for the first time. Before I was using dried peaches and grinding them up with some brown sugar as the base rub. I may still do that and use Heaths peach rub too. Your AP seasoning is amazing by the way. Thanks for all the good tips and recipes you share with us.

    on my weber’s thermometer, it takes 5 hours at 375 to cook ribs to 202F. One thing you need to make sure of is the temp at your meat location. on my weber, the thermometer is at the top. i use a Slow & Sear on my right side of the grill with the charcoal and put my ribs on the left. just because it says it’s 375 for me at the top of the grill. where my ribs are it’s much much lower and takes much longer to cook

    you know hes good at bbq when he has that accent. kinda sounds eastern texas, from a fellow texan. he could be from houston though. edit: looked it up, i was spot on. hes from dallas area desoto county.

    I made a modified version since i did not have all those peach ingredients. but used his ap and hot rub and his timing/temp/wrap and even with no spritzing they were so insanely good!! I did do the peach jam/sauce step at the end.

      Right...should never go to a bbq restaurant...just pay him to cook what you want
