This is my favorite thing to eat at family gatherings! Yes it's very basic but it's still delicious. The butter was to melt and mix with the cornflakes. I personally prefer the shredded potatoes and more cheese.

She warned her kids, who were my friends, about how I could be a bad influence on them and they should stop hanging out with me. Such a peach!

It was always either sliced/scalloped potatoes or hashbrowns, not mashed hush puppy things, though the rest of the recipe was similar to what you did. And everyone called them funeral potatoes because they were an easy dish to throw in the oven and feed lots of people after a funeral service, but people would also bring them to pot lucks, give someone in the meal rotation after they had a baby, etc. So you'd show up to someone with a newborn and give them funeral potatoes - Mormons are a special breed 😂

Maybe what it was missing was that stick of butter you left out. But what I’m really here for is the plethora of weird American foods. Grated or cubed hash browns? Hash browns are literally made of grated potato 🤷🏻♂️ Also powdered everything. Huh. America. So weird.
All the powdered stuff is thanks to food preservation technology from WWII. It kept soldiers and civilians fed when supply chains were disrupted/slow. Instant ramen actually came about in a similar way. All these foods persist because they are shelf stable, filling, usually cheap, and the people who grew up eating them get a nostalgic feeling from it.

It's because funerals tended to also be potlucks to some degree so this was a common dish for someone to bring.
yes-the potluck afterwards for the family and friends. Grew up in Indiana mostly in Baptist and Wesleyan circles who did this.
