Yesterday I made your Pecan Slab Pie and Sour Cream and Chive Dinner Rolls and they both turned out excellent! I’ve been making your recipes for so long that it almost doesn’t feel like a holiday without a Claire Saffitz recipe on the table!
They look very similar to the Scottish delicacy of Tunnocks Teacakes, something my grandma always had in her sweet drawer, with the differences being that Tunnocks Teacakes are milk chocolate (though I think they do offer a dark version) with a thinner coating, the marshmallow filling is soft like that Fluff stuff rather than set, and they're a bit taller, but they're oh so good, and I rather crave them now wishing I got some while I was out yesterday... :D
I was just going to mention Tea cakes! one of my favorite treats. We also have a cookie that is sooo similar to this in Canada it's called whippets. They have the addition of a jam under the marshmallow before the cookie.
I was going to say the same thing!!! Love a good teacake (though I'm more of a caramel wafer gal), I was so excited to see something similar in the thumbnail. According to Wikipedia tunnocks teacakes were created in 1956, so I guess this is technically an earlier version (although I think the idea of putting marshmallow on a biscuit and covering it in chocolate is probably quite widespread and I doubt anyone was copying anyone)
“This holds up, these are delightful”, Claire Saffitz. Put that on your box, Nabisco. That’s great advertising! Although I have been a vegetarian for almost 20 years and marshmallows are not vegetarian friendly, I still won’t miss any Claire’s videos.
I always look forward to a new Claire Saffitz video. Her videos are the *perfect* thing to watch in the morning while I sip my coffee and sit under my SAD light during these fall and winter months. I always appreciate how she is able to teach baking theory and technique while making it seem accessible and unpretentious.❤
These look like an American version of the Swedish Biskvi/Sarah Bernhardts: an almond cake base, buttercream filling and a chocolate shell! They can be found in almost all cafes around here and are a very decadent treat :)
I love that these are in the same family as the Scottish Tunnock Teacake and the German Schokokuss (and upon Googling, also the Scandi Flødeboller too!). Just a nice biscuit on top of marshmallowy goodness all covered in chocolate ❤❤
This year I cooked an entire thanksgiving spread for me and my family. We're actually all kinda sick right now, so I figured the best thing for us to feel the spirit of the holiday is to cook as many dishes as i can for our small family dinner. We're having: Honey ham Cornbread dressing Green bean casserole Mashed potatoes Mac and cheese Candied yams and dinner rolls! Cooking for me has always been a way for me to connect with my family, and the earth! I use it to express myself, and to remember my family members who are no longer with us, that helped teach me the things I know about cooking for a large family. I'm proud of how far I've come and I'm excited that I get to eat dinner with my family!
Midwestern of origin here - we didn't have Mallowmars, but we DID have Pinwheels, which are conceptually the same. I think same brand, too. These look amazing and like something I'll never make because the hot sugar scares me. Love the cat drama, too, and can relate. I'm sure it makes others twitch, though!

I think these are the same as Whippets in Quebec, Canada. Some have a jam or sweet filling in between the cookie and marshmallow and sometimes a flavoured marshmallow (mint or cherry).
Please try a pretty popular off-the-shelf Chinese egg tart. It's made by Success. You can google it by saying SUCCESS IMPORT Egg Tart 6 Pieces, that's generally the bag it comes in. It's delicious on its own, I would love to see your interpretation.
The reason they didn’t sell them everywhere, was because they would melt during shipment. They only sold them in the south during the winter months, but far more frequently in the northern states. So those in the Northeast are more familiar with them.
It's always Claire's recipes that are the birghtest shining stars during Christmas or other parties. Pecan brittle cookies, sour cream chive rolls, carrot cake, butterscotch blondies and so much more - I can't tell you how many people I've made happy with your recipes! And currently my husband is obsessed with your lime bars, so that's another win in the book!
I'm thankful for the wonderful teachers I've found on UA-cam (Sohla, Claire, Carla, Rick, Priyah) who have made me a much better cook and have improved my relationship with food itself!
Thank you for the nostalgia! My mom would pack Mallomars in my lunch box when I was a kid. I'm now 73 and live in NC, so it's been a VERY long time since I've had one. Maybe I'll try to make some for my grandkids. 💕
These really reminds me of the Danish sort of treat known as "Flødeboller" (direct translation would be Cream-buns. There's no cream in them, and they're not buns lol) Which are like, fluffy meringues (not baked.) coated in dark chocolate and typically either on a wafer, or marzipan-esque cracker or cookie. Very good, but can be quite sweet. Always fun to watch Claire in the kitchen::) Wishing everyone a good day/night.

Yessss! I didn't expect a video today. Also, I'm not hosting Thanksgiving. I'm having dinner with my best friend and her husband/in-laws (my husband and I don't really have family. His is dysfunctional, and I'm an adult orphan over here). The FIL does the cooking, and he doesn't "believe" in salt. He doesn't have high blood pressure or anything, so I don't understand it. Oh well. He also insists on doing most of the cooking himself. I'm bringing your sour cream and chive rolls, but damn do I wish I could bring a vegetable that isn't low-sodium green bean casserole. HAPPY THANKSGIVING!

haha, I ate some of these yesterday for the first time in ages. In canada these are called viva puffs or whippits but they usually have jam inside. Apparently they are originally Danish, but only took off in canada in 1900 or so. Mallowmars are a copy of whippits.
In Britain, there's a thing called Tunnock's Tea Cakes which is a Scottish made treat that looks very similar. I think the base of Mallomars looks thicker, and the marshmallow filling looks much thicker too. The Tea Cakes have an almost whipped cream like consistency.
In Canada they're called Whippets! We have some with different flavors of jelly inside, they're very popular. We had a bunch of commercials on "how to eat a whippet" and my favorite was to smash them flat before eating them.
As a chemist and a cook, it’s always funny how much they are one and the same. What Claire described with “seeding” chocolate for tempering and the chain reaction from undissolved sugar in caramel is just nucleation. In other words, where crystals in a dissolved solution act as “nucleation sites” to form new crystals. Chemistry/cooking truly is just controlling or taking advantage of these phenomena to achieve some desired outcome.
