After 35 years visiting Land of Spice, I do recall the few unexpected moments that I could not eat the dish because too hot. The “worst” was a side dish of morning glory vegetable stir fried, no chili visible. Maybe they used chili infused oil?
The standard of pad krapao for Thais actually not spicy that much. I think the spiciest Thai dish as a normal dish not a food challenge probably are jungle curry from central and fish kidney curry from the south.

@@thisisalexfoxx you can also get just the fresh chopped chilis almost anywhere and also sometimes you see them in vinegar instead of fish sauce.
