Wonderful history and cooking demonstration. My own experience has been that the dough for panelle is made over a fire. We use all the ingredients you used, but we cook the mix over a flame and then, as soon as it thickens and pulls away from the sides of the pot, the hot, creamy dough is smeared on little blocks of wood (about 3 x 5"). When cool the slabs of panelle dough solidify and can be peeled off the block of wood. They can be fried at that time, or held in the fridge for later. The result is quite different as the cooking results in a finer, smoother product, but it is not as easy as the method you demonstrated here. As to which method is authentic, I have no idea, but as you said yourselves, panelle have advanced from a crude thing cooked over an open fire to a refined food. Sempre Avanti!

Wait u r not yet done , u are topping it with these pieces of fresh acid lemon ( ya moftari ya ga7ed) , ask Sara to translate that for you cause I couldn’t express it in English ... Sara your reaction at the end is speechless ( ya bakhtek) , which I was in your place , bite from this Sandwich can blow my mind , I love food guys , I Will always love youuuuuu xxx
