CORN RELISH - Bonita's Kitchen

  • Welcome to Bonita's Kitchen! Today we will be making CORN RELISH, made with fresh or frozen corn, cucumber, onion, green and red peppers, RECIPE POSTED BELOW!

    • Sterilizing and Cannin... Sterilizing and canning procedures.
    Ingredients:
    - In medium boiler, add white vinegar, water, sea salt, yellow mustard, mustard seeds, turmeric, white sugar and pepper start boiler on medium to high heat for 5 minutes keep stirring the mixture until boiled.
    Put corn in mustard sauce and start to boil, then peel onions and chop in small pieces, clean and chop red and green peppers and toss in boiler.
    Then cut and chop cucumber in small pieces and toss in boiler, put pickling spice " is peppercorn, yellow mustard seeds, allspice berries, coriander seeds, flakes of red peppers, ground ginger" in a piece of cheese cloth and add to boiler.
    Start the boil for about 10 minutes, following the sterilizing and canning procedures get your bottles ready to fill.
    In a small bowl mix together 4 tbsp flour and 1/2 cup cold water until all lumps are gone from mixture.
    Start to pour flour mixture in your vinegar mixture with veggies until all used keep mixing until it starts to thicken, remove from heat.
    When all tossed together start scooping the corn relish into your mason jars to bottle.
    Please follow your canning instructions to bottle your pickles unless you are going to refrigerate all your pickles.
    Sterilizing and Canning Procedures
    Method:
    Sterilization:
    1. Start by getting a large boiler and filling in about quarter full of water.
    2. Then starting the water to a boil and placing your Mason jars inside then cover.
    3. After let the pot boil for about 15-20 then remove your bottles and place them on paper towels or a cloth.
    Canning Procedures:
    1. After your food items are cooked and ready to bottle, scoop hot liquid and put inside your Mason jars.
    2. Continue doing this until all bottles are complete and leaving 1/2 inch on top.
    3. Clean around the top of your bottles removing any food of rims.
    4. Then place caps and lids on your jars and tighten.
    5. Then place your jars back in hot water bath and start the boil for another 5 minutes with the cover on boiler.
    This recipe makes 12 bottles of mustard cabbage pickles. Prep time: 20 minutes Soaking time: 12 hours Boiling time: 2 hours Bottling time: 1/2 hour

    Bonita I made this 🌽 corn relish yesterday it's so delicious I did not have no cucumbers no green peppers there was none in the store so I did not use it but I used yellow orange red peppers and onions and mustard seed celery seed in mustard I did not use the other spices because I did not have cheesecloth to put in the relish but it was good I put the vinegar sugar water it turned it very good I taste it took my breath away two more vinegar so I add more water to it and cornstarch I had some for breakfast this morning thank you again for the recipe I appreciate you very much you have very sweet lady you make me so happy when I see your videos you make my day thank you very much sweet lady make God bless you and your husband Raymond I would like to know how much is your cookbook thank you

    To make cutting corn off the cob easier put the ear, small end dow, in the center of a bundt or tube pan. It helps hold the cob steady and the kernals fall into the pan.

    bonita i was wondering is this the same as mustard pickles? my bro in law used to make that, and i could eat the whole bottle in 1 sitting...it was soooooo good!!!!! this looks just as good... i live alone so i tend to eat pre pared foods, with this "pandemic" every one is afraid of being around /near anyone much less eating or buying home made foods;[;[;[ this election isnt helping at all in the USA. so ready for thing to settle down and start life again as normal as possible...what a yr its been!!!! thank you for a great video ;];];] stay safe and congrates on your book!!!!!

I do have a recipe for the mustard pickles you are talking about and the sauce is the same as our Corn relish ua-cam.com/video/_HyYBJGmDJw/v-deo.html The ingredients are different and they are both so tasty.     My favorite, I find the store bought too sweet these days. I suppose it has to be canned? Could a smaller batch be made and just refrigerated? Thank you for sharing this.

    I use frozen corn so I can make it any time of the year. Also I never use a water bath. The lids pop down as it cools.

      @@bonitaskitchen I used to weight 250 pounds but am now down to 139 pounds. I didn't try to do that but cancer did. Now I am cancer free for 32 months and always hungry!!! Cheers have great day!!! Bill

    most recipes call for just vinegar, so why did you mix vinegar and water? sorry, I am just asking!

      Hi Abdullah, thank you for your question and for stopping by, using just vinegar in the corn relish makes it to vinegary " strong tasting" adding some water takes the bit off but keeps the flavour and mustard taste in tacked.       Hi Linda and thank you for your message and question? This is a lovely a very tasty recipe and very safe. The flour is cooked in the sauce and it will be very tasty to the last bottle. I hope you get to make it sometime. But if you don't want to use the flour leave it out and the sauce will just be a little more runny and thats ok. Enjoy :) Bonita
