    The portions are small because you’re eating 10 courses. I ate here last November, had 8 courses, and it was plenty of food. People should be more open minded about the many ways to serve and present food. It’s just as much a visual experience as it is a culinary one.

      I managed social media for the restaurant group they are a part of at the time so my meal was free. They started out doing 8 and 12 course menus. Now they do a flat 10 course for $75.

    Everyone saying that they don't give enough food:
    A quick google told me the average meal consists of 11 bites for women, 17 bites for men. A meal here consists of 15-20 dishes in a row. You're getting at least one bite of each dish, likely to be a couple bites each. By the end of this, you will have experienced not only a larger than average meal's worth of food, but also an unforgettable food experience with unique tastes and indescribable creativity.
    Going here means going to a fine arts event with masterpieces you can touch and, more importantly, eat.

    I don’t know why I always read the comments. Is everyone here so daft and insecure? Not understanding that fine dining and this space in particular offer a TASTING MENU. At least ten servings of all these unique small plates that work with one another, they don’t just hand you a piece of lettuce and charge you $40. UA-cam is so content and view-driven that no one actually takes the time to learn..and seriously, grown adults talking about how chefs are speaking and the tone of their voice? As if they are professional hosts? As if they have to knock them because they were awarded a high honor that by themselves could only dream of achieving? I wish it didn’t get to me so much. This is a wonderfully produced video and is fascinating to hear their stories. Keep it up BA, and come on commenters, we can do better!

      literally overpriced plants from the woods on simple, small dishes. These "chefs" make the most basic low-effort _dishes_ that are priced at around $75 - $400.

    I find that many people don't understand that the portion sizes are so small because you get several courses, the flavors are extremely intense, and the ingredients are more expensive because these chefs do a good job at sourcing local farmers for good, high quality produce and ingredients. You pay for the experience, not enormous plates of food.

    A lot of the people commenting aren't understanding how these types of restaurants run. You pay a set price, for here it's $65 and you get 10 courses. They're not all that small. It's well paced and you absolutely get a full meal out of it. It's about appreciating the ingredients, and the skills of the chef. It's a memorable experience and not something you do every week. Saying it's for rich snobs is ridiculous because an appetizer, drinks, and a main entree at any chain restaurant will set you back almost similar.

      But to many people going out to eat at any chain restaurant isn't something they do every week either. Also, you give me $65 at a chain restaurant for just myself, I'll have either 5 meals or I'll eat 3 meals and leave trashed (including tip, more if I cut that out). I can't remember the last time my family (3 people) has spent $65 at any restaurant since my brother's graduation (more people). $65 is more than a lot of people spend for a few weeks of groceries.
      I get it, I do. But it is for people that can afford it - people that don't need that $65 for something more important than this dood's art - like bills, saving for a car or education, or moving. You also didn't include the cost of transport, etc., which with public transportation could easily add another $5 to $10, or with a car could run you hella parking meter/ramp bill.
      It's not something everyone can or wants to spend money on is the point.

      It's pricey, but it's supposed to be an experience, something new. Not everyone can afford it, not everyone has to go. But it's cool to try it once or twice.

      Wow, come to Australia. That food for 65 bucks is a bargain. There is no way me and my girlfriend can enjoy a 'good' restaurant meal without spending atleast 50. I get the difference in your dollar to ours but I still feel that, that is great value. Plus chain restaurants usually just want to get you in and out and don't take the attention to detail that these places do.

    Why so much hate? If there's a place like this in my hometown, I'll go there every season to taste what my area has to offer. It's really jarring how even the commonly used ingredients can actually be imported stuff and hyperlocal chefs like them can open up our horizon. Highly unlikely for me to visit nonesuch at okc but big applaud for them!

    If you want quantity, get a super sized combo from mcdonald's... this restaurant is about a quality experience. I love tasting menus. You always end up trying something you've never had before and these guys clearly care about their craft.

    Everyone complaining about the amount of food needs to realize this is a tasting menu restaurant. They serve 10 courses for your meal. They aren't serving gut busters here. Its quality over quantity at these restaurants. It's a flavor experience.

      That's how everyone should eat all the time, tbh.
      Here in Japan, even when getting fast food, the large drink here is smaller than the American small.
      A typical meal, even at a cheap restaurant comes with 3-4 plates of food, but combined it's still half the amount of food as what you'd find on a single American restaurant plate. But the quality is always amazing. Clean flavors, high quality, minimalist food.
      It's just a better way to eat.
      Tastes better and makes you feel like you ate more than you did.
      It's no surprise most people are thin here

      Danielle Spargo oh god the weeaboos, everyone has a different palate, build, metabolism, etc.
      Americans are usually large, japanese people are thin and not too tall, you even see japanese buildings or train stations which are made for people who in this day and age are considered small, the ingredients are also different, the culture is, everything is, also, people are thin in japan because they are scared of being fat, since 99% of the population is thin it`s a huge pressure you get to be thin, fat people are treated as crap there.

      i've eaten there twice. the artistry is just incredible, and i've experienced flavors and textures and combinations i never had before. it's really worthy of the accolades, and the chefs are the nicest, most dedicated to their craft and jumble guys imaginable. it's really cool that all the various chefs are tasked with 1-2 dishes and they perfectly time them to come out and describe and serve in a smooth, but not rushed pace. seeing how incredibly complex and how many components go into creating even one of the small plates easily justifies the price when you see it first hand. it's really something to see. truly like a great stage play or live music act, all performing at a high level.

    As much as I love how cool this looks, I’m not too sure it would be a place you’d go to to feel full. Much like paying for a ticket to a concert, an opera, or a tour, this is more like an experience. So restaurant is definitely not the best way to describe it.

    have to say, I'm so surprised by the comments on this video. I have no idea where people are getting 'pretentious' from - these are three guys, growing up in Oklahoma city, self taught, no famous chef mentors, working in their own kitchens, dreaming of and finally creating a beautiful culinary experience that elevates what eating can be in their hometown. They look and sound like regular, average people. There seems to be so much condescension in these comments around the pricing and how the meals look, which makes no sense. A quick google search of what a tasting menu is will show you that you aren't paying $75.00 for one plate, but for a set of 10 plates that comprises your meal. You get a completely normal amount of food by the end of the meal! And these chefs know that eating, like many other things, isn't just about the taste - it's about the smell, and how it looks as well. Dining (at its best) Is a multi-sense experience. These chefs seem to have completely captured that. I think a lot of the negativity comes from people feeling like they don't 'get it', which makes them afraid to try it because they don't want to look or feel stupid if they don't know what something is. It's the same with modern art. But it isn't about 'getting it' - there's no quiz at the end. It's just an experience! And it's not every day eating - it's a special meal every once in a while. Why are we all acting like that's some new, crazy concept? I've never been to OKC but I will absolutely be eating here if I ever find myself in the area. Congrats to these young chefs! Just goes to show what hard work, dedication, and a lot of passion will get you.

      i just had that over gordon ramsays 3 place. its 130 bucks for 3 courses, its not too much for that money. BUT with ramsay you get to eat at least real food in real portions, only the ingredients and the presentation (and the name on the door) are so outstanding, that it justifies the pricing.
      THIS however...is truely an insult. its art. as in artsy fartsy nonsense.

      CutThroatNin3 he has a point in that people usually enjoy food more when high. However, I think it'd be a waste because you wouldn't be able to discern the difference as well.

    Wow, I'm from OKC and I wish this existed when I was growing up. Still, Classen Grill, Anna Maude's cafeteria, Furrs, Charcoal Oven, these made me happy. Regardless, it's so beautiful to see the Oklahoma spirit here, doing real farming, community, and cooking, and if you don't have a famous mentor or chef school you do it yourself. By the standards of San Francisco, where I now live, a $100 tasting menu would be an incredible bargain, that would be five movie tickets. I've been to our local equivalent a couple times, Atelier Crenn, and it's $300 for 3 Michelin stars. And sure, you are still hungry when you leave… the joke is, do you want to go out to Burger King before the meal, or after the meal? If you just want to fill up cheap, go to Burger King and skip the meal. That's not what you're paying for. Anyway, this place looks so sweet. If they've integrated fried okra and chicken fried steak into the menu somehow, I'm there.

    I don’t think y’all understand how this works. $65 for 10 courses. They’re not all the size of a Petri dish lol. About the same as any other restaurant just a more personal experience where you can take in and appreciate the ingredients and craftsmanship of the chef. And no, no one is doing this every week, maybe not even once a month.

    This is so amazing! Like they said, "We don't have that here." Applies to pretty much everything in Oklahoma. Everything is pretty limited and a lot of places dont last long. I am so grateful to BA for shining a light on this place

    When I think of restaurant kitchens I think of stress and shouting and everyone getting under everyone's feet. But this kitchen and the way the chefs talk it all just seems very calm and...laid back is the wrong word... you can definitely see the love and passion, just minus all the life-shortening stress levels. And the food looks delish :)

    People complaining about $65 for a restaurant of this caliber are hilarious because that price is cheap. Saison in San Francisco is $178 per person and they have great food but nonsuch is better IMO

    Mumbling seems to be a thing for many of the young people nowadays. The clip was very well done despite mumbly guy. My best friend has his mumbly daughter on the answering service and gets mad at me when I leave mumbly garbage messages. I can't deal with something that I can't understand.

    I am not really a food person, but this story was very inspiring. I would love to sit down and talk with these three chefs about food and life. good for you! I applaud the quality of work you do and the pride you take in the process. Apparently in 2019 you are so booked as to not take reservations now so glad to see your good run has continued. I would pay $90 for you menu and that is saying a lot.

    The presentation is beautiful, but I like my food hot! With all that presentation, I worry that the food with its tasting (small) size will have cooled down before it get to the table. Temperature affects taste.

    The sound editing on this was sub-par. I could hardly understand what they were saying and therefore I got nothing out of this. Did they explain how their restaurant works? I couldn't hear.

    I went to college in OKC, and we felt like we never “got” what people in other capitol cities “got”, or if we did, didn’t get recognition. This video is rewarding to an extent that is almost hard to explain. Thanks bon appetit, and an even greater thanks to these chefs.

    I know the world is different. And there us all kinds of foods and incredible things to eat and see in the world. But did he just put fried Caterpillar on corn leaves and call it baby corn? Or was it baby corn garnished with fried Caterpillar

    This reminds me of a restaurant located in Bogotá called Leo. It is very similar in looks and content. The chef uses ingredients all around the country to create little delightful dishes that tell us a story about the location where these come from.

    We cannot possibly imagine what these chefs have to do and go through to bring tasty and even more so aesthetically pleasing foods on to the table. I mean look at them bending over and crafting each dish with such attention to detail and skill. Just nothing but love and respect for these guys.
