  • 100 g dark chocolate
    30g unsalted butter
    1 egg
    50g cake flour
    65g sugar
    1g baking soda
    5g cocoa powder
    1g salt
    1. For pretty cracks, the temperature of the dough before baking is the most important (the temperature of the dough is 24~25℃)
    Let it rest until it is neither runny nor thick.
    Please rest in the refrigerator or room temperature in spring and fall, and in the refrigerator in summer.
    You may not need resting in winter
    2. Remove the eggs from the refrigerator 1 hour before and prepare them at room temperature.
    3. Preheat the oven sufficiently in advance.

      @@gay4raquelle844 I just use a kitchen scale. I do have cups as well, for certain recipes but i found that a scale just make everyhing easier.

    I have tried so many recipes but they always went wrong. But this recipe is just perfect! It worked on my first try and it is outstanding!!! It also works with all purpose flour because that's what I tried. Also recommend dark chocolate instead of regular chocolate!

    i saw a lot of comments which dont really approve this recipe.. idk tbh😭 they turned out really flat, even though they have beautiful cracks,, they also spread out too much they look silly💔💔 BUT! they are incredibly TASTY AND CHEWY!!! i used milk chocolate instead of dark ( reduced amount of sugar from 65g to 40g ), and all-purpose flour instead of cake flour. i recommend this recipe, especially if you dont mind its looks💗

    똥똥한 빵처럼 나왔어요😂
    생각해보니 설탕을 너무
    안 녹여 주었던거 같아요ㅠ
    그래서 뻑뻑해서 냉장보관도
    패쓰하고 구웠거든요
    다시 해 봐야 겠어요ㅠ

    I already made this cookie 2 times but they always turn out not right. The first time I made it the dough is too thick and there is no crack on the surface.
    The second time the dough kinda runny, there is crack on the surface but it doesnt flatten out.
    Also my cookie color is waay too dark.
    So my question is, (1) can I add like milk or more liquid to make it runny? (2) what kind of dark chocolate do you use? I use dark choco compound but it was too dark, can I use milk choco compound instead?
    If anyone can share their knowledge please share it with me. Thank you!
    P.s the taste is great but the look isn't

    (Being serious though I tried these out [with the help of a friend so I don’t burn the house down] and they turned out good! Although the most struggle we had was getting them into the shape when putting them onto the tray.)

      Hey I tried my best converting the measurements! Here’s the list:
      1 cup dark chocolate
      2 tablespoons unsalted butter
      1 egg
      1/3 cup cake flour
      2/3 cup sugar
      1/4 teaspoon baking soda
      1 teaspoon cocoa powder
      1/4 teaspoon salt

    I have a question, my cookies spread a little too much, so they became a little thin. (They were still round in shape) What do you think might be the reason?

      It happened to me also, but in my case was that I used aluminum foil and spreaded oil, that caused the dough spread away and I didn't had the ice cream scoop so.. I recommend to use the type of paper that use in the video
      ( sorry if there's any grammar mistakes, english isn't my first language)

      Wouldn’t recommend that, often it is just not exact enough just to measure it in Cups etc. As soon as one ingredient is off, the consistency won’t be good and the cookie may taste and especially look different 😊
      I definitely would recommend to invest into a scale, its just easier that way👍🏻

    레시피 대로 벌써 두번째 시도 했는데 반죽이 되직하게 되네요 ㅠㅡㅜ 뭐가 문제인걸까요? 계란양을 늘려볼까요? 구우면 잘 퍼지지도 않고 쫀득한 느낌보다는 퍼슬퍼슬 빵처럼 되요. ㅠ 베이킹 소다가 문제인지 밀가루의 문제인지...알 수가 없네요.

      혹시 반죽 섞으실 때 얼마나 섞으셨나용? 오래&많이 섞으면 글루텐이 나와서 빵 같은 식감이 나와요 ◡̈ 계란 휘핑을 너무 오래해도 안 되구요!

      yes cake flour has less protein than all purpose
      you can make cake flour by mixing all purpose flour with cornstarch; google for correct proportions

    이 레시피로 만들었는데 크랙이 예쁘게 안나오고 자글자글하고 굽는 과정에서 많이 퍼져서 많이 쫀득하지 않아 아쉽더라구요 이 경우에는 반죽의 온도가 적절하지 못했던 걸까요? 맛은 좋았어요!

    반죽이 되게 돼서 안에 안익엇어요😢
    근데 맛은 짱이엿음.. 담엔 농도 맞춰서 해볼개요ㅠㅜ

      A year late to the party, you can, but the results may be a bit firmer due to the higher gluten content in all-purpose flour. You'll have to be much more careful to avoid over-mixing.

    I made this 4 times, the dough always end up too hard and the shape isnt pretty and has no cracks but its still really delicious, not too sweet and the middle part is really soft and will probably be good with milk

      I find the baking step really hard. Out of all the times I’ve tried, only 2 times came out looking beautiful. The rest always looks off, no cracks 😢
