if your not burning the seasoning its not blackened the burnt seasoning is why they call it blackening!! it takes on a whole different flavor when the seasoning is burnt better than your example what you are doing is fried fish with seasoning. turn the heat up to high it should smoke heavy when it hits the pan 3 minutes a side and it is done burn the spice serve with drawn butter and lemon

What seasoning did you use?
I used the Paul Prudhomme, seafood magic blackened seasoning. It’s one of my favorites. But you can use the blackened seasoning you like! 😋
