Damn that last fillet looked cookbook-perfect, and I really liked the idea of using the blackened-oil-splash to finish out the fillet! It really added the right amount of color and (seemingly) flavor without feeling gross and burned. Now I gotta try this tonight
You NAILED it! I'm a Louisianian of over 50 years. The 3rd filet looks "spot on". This is how I learned to cook it, and it turns out AWESOME! Liked, Subscribed, and Bell "on"!
Actually I'm from New Orleans and Paul Prudhomme developed the recipe for blackened fish. This is not blackened but it looks very good and I may try it.

Mahi would be a great fish to use for this. I would recommend doing it outside if at all possible unless you’ve got a really good fan above the stove that actually vents out of the house. You can totally use a grill, I’ve done it on charcoal and gas - charcoal makes it a little harder to control the temp but it’s very doable. Thanks for watching!
Blackened seasoning doesn't have the intended taste unless the seasoning is burned. It gives it a unique flavor that is nothing like the seasoning itself.
