Made this today for a family that just lost a loved one. They said it was the best meatloaf they ever tasted! I followed everything to the letter, except I used the on sale 80% lean ground beef, and homemade plain bread crumbs. Thank you for the inspiration!
Fresh and dried herbs are used for different purposes. Fresh mint provides a cool and peppery taste, while dried mint gives warmth and very subtle flavours. Both have their place in the cooking cabin.
Ina just saved me a whole bunch of prep. I usually put carrots and celery in my meatloaf that I finely chop and saute before incorporating them into the mixture, this is much simpler. I'll honey roast the carrots and serve them as a side along with the requisite mashed spuds.
I love this recipe! I use grated mushrooms & zucchini in my meatloaf. It makes it so tender, just have to remember to squeeze the water out of the zucchini or it will be too wet. But yeah, meatloaf is amazing. Always.
I think we need a spot with you and Ina together. I think you would have more in common than we think. You are both dedicated to maximum flavor with good technique.
I made this meatloaf for dinner tonight and I wasn’t impressed. It was too sweet with the ketchup, and it lacked flavor to me. I would definitely add chopped garlic and use tomato sauce instead of ketchup. It was moist and tender, though! Glad I tried it! Love your UA-cams! You have a great and fun-loving personality! Makes cooking a blast!
I make her turkey meatloaf which is equally great, but I top it with a 50:50 mix of ketchup and whole berry cranberry sauce. Save some sauce to serve on the side. Addictive.

This may be famous. But try mine. 2 pounds ground chuck. 1 box of Stove top. 2 eggs. Moisten the stove top with 1/4 water. Let sit 5 min mix it into meat and eggs. Form into loaf bake 325 for an hour. Then broil till you get a nice crust. Yumm

I have The Meatloaf Bakery Cookbook for extra inspiration. But if I thought seasoned breadcrumbs, ground beef and a couple of eggs could produce a tasty dinner and shave prep time, I'm all for knowing about it!
Oh I am *definitely* making this one. The only thing I think is missing is crunchy fried onion straws … and my second time making it, I might skip the ketchup and make gravy (from a just-add-water package, of course!) for my mashed potatoes. Sheer heaven!
Make this with one less onion,instead bell pepper,also instead of just ketchup, brown sugar,dry mustard some salt onion powder garlic powder, and favorite hot sauce to taste
My mom topped our meatloaf with tomato ketchup, brown sugar, and dry mustard and she put lots of sage in with the meat. We would bring meatloaf sandwiches to school the next day, and we were the envy of all. Rest in peace, Mom
I haven't made this but I have made Ina's turkey meatloaf multiple times. Absolutely delicious but calls for 5 lbs ground turkey. I felt like Alice from the Brady Bunch asking Sam the butcher for 5 lbs of ground meat. Quickly learned that halving the recipe is PLENTY for a single person. I'll give this recipe a try next! Can't go wrong with Ina.
Seems like to much onion for me. I mix tomato sauce, Little bit of ketchup & mustard & brown sugar for my topping. Good thing about meatloaf, so many ways of making it! With everyone's added touches that they do to it !

My humble mom makes a better meatloaf, picture this, she uses NO ketchup, she uses Campbell’s tomato soup instead AND she rolls the meat loaf around hard boiled eggs and a sautéed minced pepper and onion mixture AND THEN wraps the whole loaf with thin bacon strips. ❤
Because there are two eggs in it, this scales down to a half-recipe very easily. Just watch the cooking time as the smaller half-a-loaf may take a few minutes less to reach its cooked peak.

I don't have access to fresh thyme, so dried it is.
I’ve made this sooooo many times!! It is the best! I’ve even made large meat balls out of that mix and baked same and they’re wonderful too!

I use Chili sauce in the meat mix and on top. I also lay a couple of slices of bacon on top before the chili sauce.

I make the same from my own recipe without the thyme. But I will try it. I use Hunts Ketchup. It gives the best taste.

In Canada just have hamburger, no ground Chuck etc.
