I noticed the recipe only calls for 1 tsp of extract. That doesnt seem like very much considering the size of this recipe. How concentrated are Amoretti oil soluble extracts? It seems like 1 tblsp, or more, should be used in this recipe. I'm very new to Amoretti products. Thanks for this video and recipe!
Thanks so much for watching. Yes, just 1 tsp. was all that we needed to add bold flavor to this batch of caramels. Our Extracts are highly concentrated and typically have a use level of 0.5 - 1 % by weight - a little goes a very long ways 😀
A few times now my caramel has went a little grainy after adding the amoretti extract. Do you have any idea why this might be happening? It doesn't happen when I make my caramel without extract, so I feel that I have the recipe and temperatures down just fine. It's only when I add the extract and after the caramel hardens up a bit. . Should I wait for the caramel to stop boiling to add? Are there any tips you could give me? Thanks!
We have not experienced this happening. From what I have learned grainy caramel is usually due to undissolved sugars. We also would recommend adding the Extract right before you remove the caramel from the heat. Hope this helps, let us know if you have any other questions ❤️

What did you oil the knife with?
Any flavorless oil works. Canola, avocado, vegetable all work great 😊

Would there be a significant difference if i used Sweetened condensed milk instead of evaporated milk?
Sweetened condensed milk is used for making hard caramel, for soft caramel you need to use evaporated milk ❤️
