I don't think any moment in this show can match the utter shock, awe, thrill, and hilarity of their first sexual phone call in 2x04. I couldn't fucking believe what I was seeing the first time.
Well Tabitha is there pretty much for the lifestyle, they both use each other and they both know it. Roman uses her as a good looking woman on her side in events and to look more normal and as I said Tabitha is there for the money basically. Roman has pretty extreme fetishes like necrophilia and being dominated which just isn't for everyone and clearly isn't for Tabitha since she said she isn't over the idea of not untangling Roman but stopped pretty much right away pretty much shaming him. And they are still together even if they know they won't be having sex if that's what Roman's into. There really haven't never been that kinda relationship between them, they are like pretty good friends at best.
I find it really interesting that on more than one occasion Roman has tried to broker a deal or pull off a project as a "present" for his family. Its so strangely affectionate in the most stilted way possible.
