    Basically they process the cheese right there in the top of the mountains. Is the very best cheese that I ever tasted . In USA we have so much variety , from all over the world actually , but nothing is coming close to this one . In 2019 we visited Bucharest Ro , and we purchased some cheese from SIBIANUL STORE , fantastic products but unfortunately for us the French ( luggage check ) they throw it away . In case you visit go to this store , very unique products

    Without efforts such as this many cultural treasures will be lost to time . We need try as hard as we can to preserve such knowlege and practice .

    These guys have my utmost respect. Most smart ass white-collar workers would be lost if they had to go and do anything like this. They'd starve to death without supermarkets. :-))
    I'm glad I grew up in a village with my grandparents who taught me some of this stuff. It's hard honest work and these people need to be making more than the investment bankers of the world.

      I'm just wondering I noticed you have a lot of buildings that shall sit underneath and make your cheese but do you have a place for the Sheep to sleep besides outside on the ground

    I didn't see them add a cheese culture (yeast/bacteria/mold?), but maybe it is naturally in the raw milk

      Well the big Ag animal farms lead to periodic wipeouts by disease. Mad Cow, bird flu, swine flu, bird flu's recent wipeout of chickens, and they even tried to blame COVID on the wet markets rather than a lab that published scientific journal articles on actually mutating bat virus to then infect human cells and monkeys. They also tried to say it originated in several other countries because they and their puppets in the US government and media think their fans (Dems) are the most gullible people ever born or simply don't value truth at all.
      (They were also told that giving away health insurance to lots of people would lower everyone else's costs because their leaders thought they were dumb enough to believe it and to deny that math exists.)
      Also, the bananas we eat now are a weaker tasting replacement for the ones that used to be grown en masse on humongous farm operations before they were wiped out by disease. The black plague in cities, and the recent typhoid in LA may also follow this pattern. Too much of the same thing, too crowded, in too little space, and disease will rip though the population.

    The urda was made from the whey. But what did they do with the curds?

      First they make a cheese through the curdling process, and from the leftover whey they make the urda through a boiling process.

      i don't believe you can buy it online. this cheese is being generally sold in local markets

      this is fresh cheese, its not meant to be held for more than a week-two. for longer times, u need to start adding salt. that changes the taste completely

      If you use salt to preserve it well, you dry it well and keep it in cool and dry place it can last 2-3 months. In time it will lose moisture and will not be that tasty but you will still be able to eat it after 3 months . 2-3 weeks it is a perfect ti time to consume it.

      Is a type cheese. It looks like cottage cheese but is lot more dense and sweet. Can be eaten as it is or used in pies.

      Unfortunately, there are not many off-grid places in Transylvania. That sheepfold is off-grid because it's a sheepfold located, away from the village, in a more or less temporary place.

      They are up in the mountains with their sheep and guard dogs , to guard the sheep against wolves and bears. All summer long the sheep graze in highland pastures, so this is where they make the cheese.

      Not the same stuff. These sheep are fed 80-90% grass, and very little grain (if any, at all),thus the milk tastes way different.
