Extra "Crispy" Chinese Scallion Pancakes 葱油饼
Chinese Scallion Pancakes (葱油饼) are addicting treats! They’re crispy on the outside and flaky & chewy in the inside. Within each layer are scallions nestled in between. They taste and smell extremely fragrant especially when pan-fried 😌 My favorite part is when the scallions pop out of the dough and get charred on the pan for extra flavor! 😋 They are also super easy to make and can be enjoyed on its’ own or with a dipping sauce (sauce recipe included in the video).
After rounds of recipe testing different flour ratios and wrapping techniques, I’ve finally finalized a recipe that’s both flaky and crispy. I hope you enjoy it! Please drop me a comment if you’ve tried this recipe. I would love to hear from you! 💕
⭐️Ingredients [recipe makes 5 pancakes]⭐️
*Dough*
- AP flour - 2 cups (240g)
- Boiling water - 1/2 cup (120ml)
- Cool water - 1/4 cup (60ml)
- Baking Powder - 1 tsp (4.8g)
- Salt - 1/2 tsp (14g)
- Neutral Oil - 1 tbsp (14g)
*Filling*
- AP flour - 1/4 cup + 2 tbsp (128g)
- Neutral oil - 1/2 cup (112g)
- Salt - 1 tsp (14g)
- Sugar - 1 tsp (14g)
- Chicken Bouillon - 1/2 tbsp (75g)
- Scallions 8-10 bunches
*Dipping*
- Soy Sauce - 1 tbsp (16g)
- Vinegar - 1 tsp (4.7g)
- Sugar - 2 tsp (8g)
- Chili Oil - 1 tsp (4.6g)
- Sesame Seeds - 1 tsp (3g)

    🏆Ingredients:🏆 - Lasagna pasta - Onion - Garlic minced - Ground beef (used this instead of turkey) - Salt, pepper, garlic powder, onion powder, Italian seasoning and red pepper flakes - Arrabbiata sauce (used this instead of vodka sauce) - Chicken stock (added this to make it more soupy) - Ricotta, mozzarella, Parmesan & fresh parsley (for the topping) - EVOO

      @@lolapop2010 A lil wrinkling is normal 😜creaming your butter with sugar to get air incorporated can help and also don’t use a super high temp. 350F is perfect.

    Hi I'm really confused about the yeast. You say 1 packet of yeast is 21g, however, the one you're using consist of 7g of yeast or at least online to buy this brand it says so.

      Thanks for bringing this to my attention. I’ve read the packet wrong 🤦‍♀️it’s supposed to be 7g. Instead I’ve read the label for the total grams for 3 packs. I just updated the ingredient list.

      Thank you ❤️ It’s better to separate them bc the chestnuts take a shorter time to cook and will become mushy if combined with the peanuts. I tried it once and the chestnuts fell apart and crumbled. The peanuts normally take 45mins to an hour to cook on the stove top so it made sense to use the pressure cooker for it to save time. I hope that helps! 🙂

    Tips for wrapping Zongzi: 1. To prevent the leaves from ripping, make sure the leaves are soaked 30 mins or more before boiling. This allows you to bend the leaves without tearing when placing them in the pot. Also buy high quality leaves, the one featured in my full recipe video is a good tried & true brand. 2. Wrap with the shiny side of the leaves facing in and matte side outwards. This prevents the leaves from sticking after it’s boiled, which makes it harder to peel. 3. I’m the last step of wrapping (before the string) make sure to give it a few taps all around for the ingredients to fill in the empty spaces. Happy Zongzi Wrapping!

I’m the last step of wrapping (before the string) make sure to give it a few taps all around for the ingredients to fill in the empty spaces. 5. When it’s time to cook your zongzi, fill your pot with cold water not hot and let it come to a boil all together. This allows it to cook thoroughly resulting in a better texture.       @@SikfanKitchen so far I've tried mango, grapes, orange, cottage cheese and scrambled eggs. The fruit is always good and I didn't really like the cottage cheese with it although I love cottage cheese with tapatio. The eggs were actually pretty good with just tajin.
