I love it with sayote/chayote, green beans or snow peas, cabbage or chinese cabbage. Also great with tengang daga/ cloud ear mushroom. But for pancit canton or Bam-i, you can basically use all the vegetables found in the filipino chopsuey!
hi sir. i have a tip for you when cooking pansit bihon. do not soak the bihon into water. because water has no flavor. try boiling the chicken stock with soy sauce and the spices altogether then put the bihon. it will absorb more flavors. but hey it looks tasty. 👍

My tip..You can add chinese/spanish chorizo while sauté the pork together with aromatics.. then last minute of cooking garnish with crushed pork cracklings which is available in coop & aldi (optional) for texture & porky taste..

I remember way back in the days, we, the kids were tasked in slicing the green beans with Gillette razor blades. No one really worried about any accidents or safety issues. Do you know that the sticky residual of the burned meat on the pan is a very good flavor! You can add broth or just plain water and this gives flavor to the dish. 👍

Your chef instructor will gave you a dirty look, or give you a good scolding, if you throw the fond away, without using it. Allow the limes to ripen to yellow before you extract the juice. It smells sweeter. The taste in the mind of the eater becomes tastier. Dayap (native lime) is sadly not that common nowadays. They use the leaves to create Patis Labo. Cloudy Fish Sauce. It removes the fish smell without filtering. It almost never reaches Manila. Patis Labo is also in short supply in the provinces such that it is almost unknown.
Next time add bell pepper or capsicum color red, yellow and green and baguio beans cut thin oblique direction. include celery/parsley for flavor and aroma a little of everything... If there's oyster sauce include in your seasoning... You'll taste the difference...

Try to cook pork estofado. It is like adobo but you substitute the vinegar with pineapple juice, add brown sugar, whole onions and garlic, soy sauce. Cut the pork into big slices, use pork shoulder or belly, like around 100 grams per slice. Combine everything and slow cook for 1 1/2 to 2 hours in ceramic or earthen pot
things you missed .... bell pepper, cauliflower, petsay baguio, celery, shrimp, quale egg, chicken liver, oister sauce, shiitake mushroom (this is the basic common restaurants recipe) .... if you want the old grand mother recipe, you can add "tenga ng daga" ( a black colored breed of mushroom), and chorizo .... and jullienne slices on most of the veggies

When you have left over lechon, you can use that as toppings to your bihon.

Combining it with pancit canton , chicharo (baby peas) wil be semilar taste with “ BAM-E”,

lomi Batangas.
You can also add Broccoli, Cauliflower, Mushrooms (cloud ear fungus), Sayote, Baguio Beans, Chicken liver, Chicken Gizzard to the Pansif.

When I am cooking pancit bijon guisado...I put some kinchay and Chinese sausage, it added distinct flavor in pancit bijon...try it!
