I just made this and it's soooooo good! I mixed the soy sauce and curry powder then pour it over the chicken just to make sure the marinade was distributed evenly. And I substituted Brazil nuts for candlenuts and added some kaffir lime leaves

I just made a curry loosely based on this recipe! I've never used nuts in my curry paste before so thought I'd give it a shot. I used Macadamias as I didn't have candlenuts. I think it helped thicken the curry and give it a slight nuttiness (obviously haha). Also, I added about half a can of coconut cream (plus the coconut milk) and it made for a very indulgent/lemak curry :)
Now, I recalled this dish. My Mom side is fr Malacca Nyonya decend. I remembered eating this with either white rice, bread and even plain boiled beehoon. Lovely 👍👍👍
I lived in Singapore for a year for college. Me and friends would stop by food courts and have amazing Malaysian dishes. It was one of my favorite international cuisines. Unfortunately I am in Singapore no more and where I stay I don't have access to tasty Malaysian food. You make my memories come alive through your videos. I keep drooling over all the food you make. I'm currently in the process of making this for my dinner. I've just blended all the spices and it smells amazing. I can't wait to cook it all later tonight.
It was amazing! I was then inspired to make it for a few friends at a dinner party and they absolutely loved it. Thank you so much for putting up the lovely recipe - you've made a complicated dish easy to follow and straight forward (and helped me to reminisce about growing up in Malaysia around the ages of 3 to 11).
I'm Cambodian and this is very similar to how my mom makes it except for the candlenuts. We would always have at least 3 bags of french baguettes...so delicious.
Thanks for the recipe, finally made this curry after watching the video for so many times. I added a tiny bit of lime into my curry (less than a teaspoon). I think it added a very pleasant brightness that was much needed. I might add a bit of asam jawa next time to keep it authentic.

Trying this recipe now. We lived in Singapore for 3 years and we all miss curry with roti. So that's on the menu today! I've left out the dried chillies as curry powder will be enough for my 3 kiddies 😬
Recently I went to Pontian Johore I ate a simple curry chicken and soup is light and fragrance not much of coconut milk. I used to cook thick curry chicken singapore style and quite similiar to your type. I still searching how they do it and may go again ask how did they do it as I know the owner coffee shop boss as it belong to one of tenant stall. The soup remind me of the 1970 curry laksa soup. I m not sure they add earthworms inside or not.

Nyonya Cooking (Malaysian Recipes) The curry powder I have came from an Indian grocer and is very heavy with turmeric. It makes very good Japanese curry, but I don't think it would be right for this recipe! I'll see what I can find.

Adrian Smith if you can't find candlenuts, unroasted unsalted cashew nuts are a good substitute

Look for the roasted chili curry powder that is meant for meat. Curry powder like masala would have a very different taste. >
