Although bread or rice diring lunch give energy they leave you feeling physically tired at the end of the day or after work - until i came across your clear detailed explanation on the two methods of making the rotti. You can feel if the insulin is down or stable by the level of exhaustion by comparing eating rice or bread with ragirotti. The cloth method (esp if banana leaves r no available) really helped to transfer the pressed dough to the pan. It is not that i am unfamilar with eating ragirotti but the proportions of ingredients and managing the dough, transfering to the tava makes it a mess. Eating bread or chapathis makes me feel bloated. I think that for many southerners wheat is really unsuitable yet they have it. Usually, I would stick to ragimudde (balls) or integrate it into chickpeaflour make steamed cakes. But eating the rotti is easy to carry n store for travel. It is a farmer's staple food in the cauvery delta regions eaten along with a bassaaru/meat stew or sambar. At the end of the day, i dont have real cravings or have hunger pangs and I am able to work through till evening on mental activities n writing things. Thank you once again!
