I love crawfish! We boil every weekend during crawfish season! Those crawfish were probably caught towards the end of the season. The shells are harder then. Also, frozen crawfish are already par-boiled so let them thaw completely, bring your seasoned water to a rolling boil, then drop the crawfish in for a few min. For juicier crawfish, turn off the heat and let soak about 10 min. The crawfish will slowly sink, pulling in some the seasoned water into the shell. Not as good as fresh crawfish, but hits the spot during the off season!

I’ve eaten more crawfish in my life than anything else, I promise you that Lafayette and the surrounding areas are the place to go. It’s also not overcome with tourist! Of course, visit NO but try Lafayette too!
