CC is continuous controller.
I don't want to make this complicated, so I try to explain in simple. Pitch bend, mod wheel, expression pedal, sustain pedal basically is midi CC, but actually, there is a total of 128 midi cc for each midi channel, most of them just have generic names like CC 65, CC45 so on, but in functions, they are the same
So you can use them for automation or control any parameters that support midi cc, for example, parameters that I mention in this plugin
You can see all midi CC available for midi track by clicking the envelope menu in your DAW, it depends on what DAW you use, I'm using Ableton Live, to access all available midi CC in Ableton Live you just need to navigate to the envelope menu in the piano roll or automation tabs or simply assign to midi controllers.
