Raspberry Curd For Macarons and cakes
100 gr. Eggs (approximate 2 eggs that weigh 58-60 gr. with shell)
100 sugar
80 gr. Raspberry puree
4 gr. gelatine Sheets
150 gr. Cold Butter (unsalted)

For someone using this as macaron filling, I suggest adding less butter if you want the raspberry flavor coming through. Chill it enough in the fridge and it’ll be just as stable as a ganache.

Yay! Finally a video that Reilly helped me make on. It was 85% success. I was able to make a decent looking one. Followed the instructions in detail. My only problem is that the batter was still sticky n stiff. Not fluid like yours but it turns out ok but kinda sticky. The exterior is sticky. When cooled down the skin is like a melted sugar that hardened. Any recommendations how I can fix it?

Chef, thank you for the recipe! It tastes great but for some reason after its all whipped up it became all runny as i transferred it to piping bag. Did i over whip it 😱
If is the batter is runny, you probably over fold it.

Hi, how much do we have to reduce the frozen fruit so it's at the correct puree consistency? Also how much frozen fruit do I need to make 80 gm puree?
