We have something in the Caribbean called cassava pone, It's wildly known through out in the islands. It's a rich, dense pudding made with sweet cassava, pumpkin and coconut and it's really good✨. If you ever come across a Caribbean bakery go see if they have some, you might like it :)

I studied abroad in the Caribbean and one of my favorite parts was the food. Cassava pone was soooo good. One dessert I tried also was this spiced bun with dried fruits, and inside was shredded coconut, I don’t remember the name tho. But Caribbean food is top notch

I actually don't fancy pone mainly because of the texture😂. But one time my father made it using the recipe in the Naparima cookbook and I was obsessed. If anyone could get their hands on one to try making pone at home if you can't get it in a bakery, I highly recommend it.

In my country we call it Bojo
IT'S DEFINITELY ONE OF MY FAVORITES, you have really chewy sticky ones(MY FAVE) then you also have the very dense ones and sometimes it's just straight up dry🙄
Just like many other cakes in my country, it's also part of tradition and you'll definitely find it at the birthday of an elder. For us personally even if we don't have a big as one for everyone to take home with, my grandma will have a small one for just us.

Cassava is really common here in Brazil, but I've never tried it sweet... the best way to eat it, for me, is cooked enough to be smashed on the sides, and still a little bit hard inside, then you stir-fry it, until it's golden. You put some butter or coconut oil (what I usually choose, because I'm vegan) to try. It'll get crispy and soft. You only add salt, no need for other seasonings. But here in Brazil, usually, our food is beans, rice, protein and something else. So you surely need to have something else with it, specially if it's something with more seasonings and it has to have some sauce, so it will go well with the crispness. I also recommend that the salt is added while you're cooking the cassava, not at the end. This way it will be more present and not just on the outside.

Nicaraguan style buñelos are a must try if you like sweet yucca treats. We shred the yucca, add finely grated queso chontaleño, and... other stuff? LOL, I forgot to write down the rest when I made it with my mom last year. So you take the mixture, shape them into small patties and fry them until golden. Served with cinnamon syrup (cinnamon steeped in simple syrup) they are insanely delicious. 😋
