Once you start trying to make your own Mexican food, you realize how complex it is. I think Mexican food is every bit as sophisticated as French or Italian. I think any random Mexican abuela could out-cook any random French chef, any time.
Dude I'm just ending a weekend in Mexico, where im from and i visited a bunch of family that still live there and sharing food with family is amazing. Definitely have missed that about 🇲🇽

I sat there chewing and chewing thinking this is just masa and cheese. 😂 ONLY thing that was decent was the cabbage they put on top, and don't get me started on the "salsa" they use. Salvadorian salsa literally tasted like watered down tomato sauce.
Chili bean burritos with monterrey cheesee OMG 😮 I ate it for breakfast,lunch and dinner for 3 weeks straight and never got tired of it,its just so good just change the hot sauce 😮
So I can’t speak for other cultures but Mexican food developed as a way of taking a recipe and make it delicious in the way your family alone likes it. And over time you develop different dishes and tastes with the same ingredients which lead to the current state of Mexican food Btw try Enchiladas Suizas, Mole Poblano, Chile Relleno (Picadillo version)
It’s all subjective brother. I’m Mex/American with the typical Mexican mother that knows how to cook everything from Pozole to Birria and dad who makes a mean asada. But I’d be dammed if I said I didn’t have some of the best food I ever tasted when visiting Italy. Mexican, Italian, Sushi are all Tier 1 level cuisines no doubt.

Nope linguine with clams is not that bad for you, it's all about fresh ingredients. Italians live until their mid 80s and have a much lower obesity rate to USA. They don't eat processed, sugary snacks, or drink beer really.
