I want this to be my last meal. Period. This dish has been something most Bengalis have grown up with. There are diff variations but they all taste the same or better! আলু পোস্ত বাঙালীদের খুবই প্রিয় l তবে আমি দুটো বিষয় বলতে চাই , suggestion বলতে পারেন ..... 1. আলু সেদ্ধ হওয়ার আগে চিনি দিলে সেদ্ধ হওয়ার সময়টা বেশী লাগে l তাই আমি যেকোনো রান্নাতেই সবার শেষে চিনি দি l 2. যে কোনো পোস্তর রান্নাতেই আমি শেষে পোস্ত বাটা দি , কারণ মা দিদার কাছে শুনেছি পোস্ত নাকি বেশী সময় ধরে রান্না করতে নেই l তাছাড়া , আপনাদের প্রতিটা রান্নাই খুব ভালো l
হ্যাঁ, চিনির ব্যাপারটা ঠিকই বলেছ। হয়তো একটু সেদ্ধ হয়ে গেলে দিলেই ভালো। আর আমরা পোস্তটা একটু ভাজা ভাজা করে খেতে পছন্দ করি। কাঁচা গন্ধটা ভালো লাগলে অবশ্য পরে দিলেই ভালো।

It is a nice variation. Though, for me, no 'phoran' for aloo posto ever, except for slit green chillies. Also, no sugar and twice more posto. And a little extra quirk of mine, I let it catch the bottom a little, only to scrap it up later. The little crispy caramelised bit with slight smoky flavour...ahhh...it tastes like nirvana, esp wth steamed rice and a squeeze of fresh lime juice. 😊
My version I use panch phoron, and holud (turmeric) in it. I also chop the onions and cook potatoes along with it after browning, some kancha longka (hari mirch, green chilis chopped), and then add the turmeric mixed with water to sizzle in pan, before adding more water. Potatoes are diced very small. The texture makes a difference. The poppy seed (posto) is not pulverized, only slightly crushed in a pestle or Mexican molcajete. Yum!
I follow you word to word, all the measurements , timings, everything . Got many compliments from my in-laws and relatives!!! Huge thank you!!! Though we grew up having alu posto frequently, but this tasted the best. Thank you again
So many memories..my grandmother who had trouble sleeping, would take the poppy seed paste, put it in a steel box and steam along with rice. Then she would mix it with a little kancha lonka and shorshe tel. I swear, those afternoon naps were THE BEST.
Our Family recipe doesn't have the nigella seeds!! This looks perfect though and just as tasty!!! :) And as a person who eats posto in all form and shape..... Almost everyday mat I suggest you try Lau danta posto once.... It's out of this world!!!

Being a 'Ghoti' my hubby loves my version of alu posto more than anything 😍😍 even I'm a 'bangal', though this is my ultimate comfort food after marriage ❤️❤️❤️

Thanks for a wonderful receipe. I tried your version this time and it came out too good. My husband is a Bong and I am not so I m really scared to try out authentic Bengali receipes. He loved it so I think I m passed and tons of thanx to u. Another thing, my MIL wud put fennel seeds in tadka and not kalo jeera and while making posto bata she ll add a small piece of ginger, rest leaving onions is same. I loved ur version too🙏

Being a Maharashtrian this is a new dish for me. I'll definitely make this just the way you showed. Here we do have a Khus Khus (poppy seeds) curry that we make. Tastes yum. Check that when you get a chance.
@@BongEats Khus Khus chi bhaaji or Khus Khus aamti. Usually made in winter and served with bajri chi bhaakri. Tastes even better when poppy seeds are ground on stone like in the old days. Simple recipe with minimal ingredients just like yours. : )

We add a bit turmeric, guro lonka and sometimes a little guro jeere. And posto paste ta te a little less water is added. Posto also at the end. Cook for 3-4 mins and its done. Any way i just loveeeee ur channel and the bangal touch in all ur recipes ❤❤❤

I love aloo posto! Its one of the traditional Bengali recipes, which I cannot keep my hands off!!

Posto has a unique flavour....... does not require any other like oniseeds or fried chilli etc it matches only green chillies&mustard oil

In Eastern Bihar, Aloo Posto is made with more gravy (jhol) in it and adding raw mustard oil while serving makes it more delicious.

Liked this variation. We usually make it without the phoran and sugar. We add in the posto last to keep it's subtle mild taste.
