    One of my staples are burritos, there's literally infinite combinations you can do. I always have tortillas and bagged salads at home, sometimes I chop some fresh veggies (tomato, cucumber, pepper, olives, ...) and sprinkle crispy onions, can add whatever protein I have (could be leftovers, canned beans, toasted canned chick peas, scrambled eggs, soft or grilled cheese, ...), possibly extra grated cheese, and add a sauce to make it more fun and flavorful (pesto, guacamole, BBQ, sour cream flavored with whatever). May exceed the 10 minute mark, but definitely doesn't take long and takes no measuring, and includes all important food groups. And you can get creative with it to never get bored!

    OMG I love making greek inspired eggs: You cook some tomatoes on a pan, when they are nice and soft you add an egg (kinda frying it in the middle of them) and then you add a dollop of good quality greek yoghurt. you top it off with chives, salt, pepper, maybe garlic powder, and eat it dipping bread on it. Heavenly.

    Getting a Crockpot has been a gamechanger for me! We are a chicken eating household, so we buy a lot of chicken breast in bulk. Cut them into bite size cubes, pre-portion them into zip-top bags (we get at least 4 breasts per bag), and they can be stored in the freezer until needed. (If you make sure that they're shaped in such a way that they'll fit into the Crockpot when frozen, it makes it so easy!) Then, in our 5-quart Crockpot, we put 2 cans of condensed tomato soup (we use unsalted, so we can add our own spicing) along with the chicken into the Crockpot. (If using frozen chicken: put one can of soup down first as a blanket, then add the chicken and cover with the other can of soup.) Cook for 4 hours. (Use high heat if frozen or low if thawed. You can check it at 2-3 hours just to see if it's already ready, if you're cooking from thawed, since chicken can cook really fast when it's already cut up!) Then, in the last 20-30 minutes, add in a cup or two of Minute Rice and and seasonings you enjoy! (Sometimes, we'll use pre-seasoned bags of rice that we get at Aldi. The chicken flavour rice with vermicelli is really good!) We get at least 6 servings from this, and it's super filling and yummy! I always add a dollop of sour cream, because I love sour cream, but you could totally do Greek yogurt or even cheese! It's a super versatile recipe and you can change it up by using different soups, spices, or proteins!

    I usually cook in one large pan so that I don't have too much to clean up. Heat up oil, add onions, tomatoes, bell peppers, diced chicken (I eyeball the amounts and I add other veggies too if I got any). Add chilli oil and garlic paste for flavour. Cook for 15 minutes to make sure chicken is done. Add a fiber like canned beans (you don't need to cook canned beans. Just heat it up so you don't overcook the chicken) and voilà you have a one pan dish with all the essential nutrients. Takes about 30 mins max including cutting. Another yummy thing is boiling potatoes in one pot, drain the water and add oil to finish it up for a nice golden crust. I recommend getting a large cutting board and mixing bowl. It makes cutting and washing/transferring vegetables less of a hassle.

    Easy recipes I love,
    Tomato pasta:
    Can of plum or chopped tomatoes in a pan with a garlic clove, more than you'd usually use of olive oil and dried oregano, let it reduce whilst cooking your pasta and done!
    We have quite a flat wide pan so there's a bigger surface area for the tomato sauce but use whatever!
    Cheaty carbonara:
    Put pasta on to boil
    Whilst pasta is cooking, grate whatever cheese, cook some frozen peas in microwave and fry some bacon bits
    Once pasta is done, drain it, put it back in the pan
    Add your peas, bacon, cheese and some single cream (idk if that's a different name in US, I'm in UK)
    Cook on very low heat to melt everything together, salt n pepper

    Japanese curry isn't super fast but it is pretty quick, and perfectly hearty for the upcoming cold winters. You can up the protein by adding more meat or tofu, and fiber with more veg. I pair it with rice so it's super easy to pop rice in the rice cooker while I'm working on the curry.

    I enjoy cooking. I can cook 30-60 minute meals. But if im craving something that has protein and fiber that takes 10-20 minutes, I usually go for a jazzed up ramen, or rice bowl. Choose whatever kind of ramen (I know there are good quality ones with extra fiber or protein) or instant sticky rice. Cook up a fish of your choice or just use canned fish, steamed spinach, and a soft boiled egg. Put that on top of your ramen or sticky rice and you got a filling, healthy, quick Japanese styled dinner.
    Last year i was obsessed with yogurt bowls. I made mine with a yogurt of choice in a bowl, frozen mixed berries, dark chocolate chips, a tri-seed blend that has chia, flax, & hemp, and sliced raw oats. So very good!

    My go-to is a bagel with cheese, kielbasa, and spinach - toss it in the microwave for about 30sec or however long it takes for the cheese to melt to the point where it's gooey and delicious but not literally dripping off the bagel, and you're all set! I make it with 2 slices of big marble cheese on each bagel slice and 4 slices of kielbasa, but tbh it doesn't matter. You can also add other stuff to it - I originally learned it working in a cafe and they always added an egg. I've also had it with leftover steak instead of kielbasa or added pickles.... It's a pretty versatile little meal. What I love about it, other than the fact that it's delicious, is that it ensures I get at least one serving of veggie in per day, and also in general it gives me a serving from each of the food groups

    Btw, you said you don’t like measuring because more dishes, have you thought about getting a kitchen scale? You can find many recipes especially from Europe where using a kitchen scale instead of measuring by volume is more common, or otherwise there are ways to calculate between volume and weight for many things I think. That way measuring won’t create more dishes!!
    Also, I just want to recommend a recipe book called the sad bastard cookbook. It has a lot of very easy recipes, and is written for people who have trouble cooking for example because of depression (hence the name) or because of lots of stress or executive dysfunction or just because they’re not that good at cooking yet. Basically some very easy recipes intended to lower the bar so that people don’t idk starve to death or live on fast food because they can’t cook. They’re all vegetarian too and most of them are vegan (because cooking without meat is easier, and it also makes it very useful in case you’re vegetarian or vegan, like me). I think you can download it for free online.

    Quick sweet snack- cut a date almost in half and stuff with PB (or a mix of pb&pb fit?) and stick the date back together. Then melt your chocolate like you did for the yogurt and dip the date halfway in the chocolate and let set. You could probably make a few when you make the yogurt and stick them in the fridge too. They are quick, easy, and great when you want something sweet, or just want to grab one or two on the run.

    My cheese decisions include "yellow cheese" of any kind, "white cheese" of any kind, and "mixed cheese" (mix of yellow and white cheese of any kind) 😁
    I have a quick pizza type thing. I take a tortilla, (any tortilla of your choice, can be gluten free, high protein, low carb), some pizza sauce in a bottle/can, any cheese you like, and any toppings you can find. Place tortilla, then sauce, cheese, toppings, bake for 15 min (depending on how many toppings and/or cheese you have on there (make sure the middle is cooked). Cut and enjoy!

    cheap ramen packets are such a great base for me to make a meal with. cook the noodles up as directed but when it's done you can toss basically whatever in. i usually crack an egg, pour in a little dash of hot sauce and soy sauce, sprinkle sesame seeds, and then grab a big handful of coleslaw mix. if i have another leftover protein like chicken thighs i can chop that up with kitchen scissors while the water boils and toss a handful in too. get some protein and cabbage greens but it takes less than five minutes and is still warm and flavorful and yummy!

    with Jasmine Rice, Crispy Onions & Cilantro is my favorite sweet and savory meal. So easy, tastes good as leftovers, i would eat it everyday and u can sub out more protein packed ingredients

    I recently made a mac and cheese recipe which I eat constantly, takes about 20mins and only uses one pan!
    Step 1: make a white sauce in a large pan. I use cornflour, milk, cheese, salt and pepper. Heat milk, add cornflour and mix until it thickens, then add cheese (this should take about 5mins)
    Step 2: add uncooked macaroni to the pan, mix into the sauce so it looks the consistency you'd want at the end. Then add boiling water to cover the past and stir again. You're gonna want to boil it for slightly longer than it says on the packet bc the sauce makes it take longer (should be about 15mins?)
    Step 3: Before most of the water has boiled away you want to add your veg! (you can also add meat but I'm veggie.) I think mushrooms are a must for this, cut them up nice and small. I also add spinach and onion, honestly, you can add anything you like!
    Step 4: Mix frequently and once it starts to look like the consistency you like taste test the pasta to make sure its cooked (if not just add more water and keep going). Now time to add even more cheese and my magic ingredient- siracha! Trust me its amazing.
    Step 5: Enjoy your yummy mac and cheese :)

    I am trying that reese's yoghurt cup asap, it looks so good!
    One of my favourite easy recipes recently has been tofu-based chocolate pudding pie (from Beryl Shereshewsky's channel, who I would highly recommend): melt 1.5 cups of (ideally dark) chocolate chips, then mix in a blender with a block of silken tofu, half a cup of sugar, 2 tbsp milk or substitute, and a pinch of salt until you get a chocolate pudding texture (all of these measurements can definitely be eyeballed - I am also allergic to creating more dishes to wash than necessary). You can eat it just like that, or blind bake a pie crust, pour it in there and let it set in the fridge for like an hour. My wife loves to add banana slices. Everyone I've served this to has enjoyed it a lot and it's one of the easier desserts I know how to make when I have vegan or lactose-intolerant friends over.

    One of my family faves is "seameat and rice", it's a really good way to use up leftover rice and also will do fine in the fridge for a number of days (which is important cause I am so bad at getting my executive functioning organised enough to cook lunch).
    Ingredients are: rice (any kind, i normally use leftovers), can of tuna, capsicum, frozen peas and corn (defrosted), boiled eggs, and carrots (I normally cook these in the microwave). I like to add mayo as a dressing but you can also use sweet chilli sauce. Just mix it all up and it's done. Side note; the mayonnaise will not keep in the fridge so I will add that just before I eat it.
    Another fun and easy recipe I like is shakshuka, although if i'm making it for dinner i will add beans or chicken for extra protein. it's a one pot dish too. Can you tell i really like eggs?

    a weird scramble, especially good if you might need a bit more iron too: put some kinda butter/oil/pam in a frying pan, medium heat. i like to add a spoonful of chopped garlic (like the kind already chopped in a jar), then a big handful of spinach- way more than you need since it shrinks so much. when the spinach looks, idk, half- cooked? add 2 eggs and more seasonings and stir until the eggs look like normal cooked scrambled eggs. i've never gotten it to where its like, something i crave the taste of, but it's a good staple with protein and vegetables and takes very little effort as long as you have eggs and a bag of fresh spinach. maybe some kinda topping like pesto would help idk

    Hey friend! Similar to your yogurt idea but a little more breakfast friendly, I often mix plain Greek yogurt or Skyr with PB and add tons of toppings, like apples, pistachios, and pumpkin spice. Also, this morning I did elevated avocado toast, so I mixed guac and cream cheese together and spread it on some toast and topped with eggs and everything bagel seasoning. 😊

    Eggs are literally the easiest source of protein on the planet for me. I love eggs. Fried, hard boiled, soft boiled, scrambled, I don't care. Any meal I feel isn't protein dense enough, I just chuck a boiled egg or two. My favourite "lazy meal" is literally Shin Ramyeon, four kraft singles or similar type of like, hamburger cheese, mix together to basically make really spicy ramyeon mac n cheese. I usually eat it with at least two boiled eggs, because eggs and noodles in whatever configuration is just heaven in food form.

    "Egg a la Luna" - Place your favorite raisin bread (or rye bread, or any kind of bread, really) on a plate. Butter it. Don't butter it. Your choice. Crack an egg over it. If you like your eggs seasoned or sprinkled with cheese, now's the time to do it. Finally, cook in a microwave for about 20-30 seconds (times will vary in accordance to your taste and microwave). This recipe can be done in less than a minute, but why be in such a rush? Take your time. You can afford to spend two whole minutes taking care of yourself. 'Cuz you're worth it, right?

      So I leaned recently that it's actually really dangerous to cook eggs in a microwave! Especially not scrambled. Because they can overheat and explode on you when you take them out. There's been actual peo hurt by this. So just be careful please!

    I can cook eggs really well, i’m vegan but it used to be a safe food for my partner. I can do a decent risotto. However, i get so stressed out when in the kitchen especially if it involves a recipe but learning to let go is so important, it’s not that deep y’know.     So you know overnight oats, but I like to make what I call 2 hour oats (takes 1-2 hrs instead of overnight). Just mix some rolled oats (i like old fashioned, not quick cooking) yoghurt, and milk in a bowl. Leave it on the counter to sit or in the fridge for 1-2 hrs. Don't cook it. Just sit there. While you're waiting you can go do your morning chores or whatever. Then come back after waiting and put on some toppings, i like fruit and nuts (ex diced apple, berries, whatever), and eat. If you like it sweeter you can always add maple syrup or sugar or whatever. It's good because then you don't have to remember to get it ready the night before.

    My go-to breakfast is a small bowl of yogurt with granola (any kind) on top. Then a sliced banana (I usually just break chunks off by hand) and a drizzle of honey. It's how I've been able to reason with myself to actually eat breakfast on a regular basis. I'm going to have to try that PB cup recipe though with almond butter, sounds delicious.

    Recent favorite which is soo yummy especially if you like lemon flavoured savoury dishes : Creamy spagetti with garlic and lemon plus coconut milk 🍋. I use the recipe from @Maya Leinenbach which is chef's kiss
