When I was in Valencia, Spain, I was taught how to make a Spanish omelette. It's essentially pan-fried onions and potatoes coated with eggs, seasoned with the basics that are salt and pepper and then cooked in a skillet on both sides for a few minutes where it looks like a super thick, egg pancake. Truth be told, it is one of the most delicious egg dishes you'll ever have.
HOWEVER, as basic as it sounds, it can be a messy and somewhat cumbersome thing to make with the flipping, removing a half-cooked, runny egg mound to a plate and then returning it to the pan to cook on the other side. At the class I took, three people who volunteered with flipping the half-cooked omelette had it spill onto the counter. So I decided to take the basics of a Spanish omelette, add some optional Spanish-favored cheese and meat and scramble it up to give you that flavor experience, but with a much simpler and fool-proof approach to making it. I give you, the Spanish Omelette Scramble!

This rocks! What a treat to wake up to a new Jeff video. We ended up cooking it for breakfast and it was awesome. The only thing I did different was that I had some leftover Taco meat and I used that instead. Thanks again Jeff! 😊

Oh yum, Jeff! You gave me a great idea. I injured my ankle several days ago and haven’t been able to get to the store. Soooo… I had some Chorizo (uncooked) that I browned and didn’t even drain. Added the potatoes and onions, and then some green bell peppers, seasoning salt and pepper. Pan fried it all up. Added what eggs I did have and then freshly grated cheddar cheese. It was wonderful! Thanks for the inspiration❤

In California they don't sell chorizo where you can sclice in the groceries store.
First off Jeff, I have all of your books and have enjoyed your channel for a long time. Even if I haven't had a chance to actually make any of your recipes yet, I still thank you for everything you do and share. I'm curious; though. I tend to buy only the Yukon Golds and Red potatoes. Do you think that by using those instead of the russets, that their would be any changes in how it turns out? Besides the different potato taste; anyway.

Ive been making scrambled omlets for many years. You can add the ingredients of your choice to change up the flavor profiles.

Now let’s just hold on a second here and take a deep breath. This isn’t a question or matter of respect to anyone. I never once said I was exclusively about only using the Instant Pot in my cooking journey. My mission has always been about one thing and one thing only: to give people the confidence and show them how easily it can be to put a delicious meal on the table -regardless of the cooking vessel used.
That said, I haven’t abandoned the Instant Pot by any means. I am simply branching out. Whether we like it or not, change always comes and sometimes it should be embraced instead of opposed.
Long time follower here. Love the variety. This channel was never exclusively Instant Pot.
@@jbob1548 sorry dude. If he wants to branch out that’s his business, but you’re wrong his channel started out instant pot. All I’m saying is I’m disappointed because I love the “pressure luck” aspect of his channel. Maybe it’s time for a mission statement??
