    Hi Steve, very interesting. My passion fruit pure is pure juice from 3 or 4 fruits, topped with Wray & Nephew as a preservative. I keep it in the fridge. I also made my own Allspice dram and have plenty left.

    This is why I love your channel STB because you go the extra mile to experiment and share your opinion on rum/ingredient substitutions. It would be interesting if you revisited it using Real Passionfruit Syrup.
    As for other cocktails from the book, I love the Lorikeet cocktail but it is a whiskey cocktail.
    I am also happy to report I managed to get my hands on bottles of Bounty White Rum and Bounty Dark Rum down here in Oz. Been trying to find these locally since you did videos on them way back.

    I always praise Selvarey for white rum. It's not only vanilla but also has a hint of lime. Almost like a key lime pie. Always plays well with tropical/tiki drinks with lime

    I just had my copy arrive a few days ago. it's such a cool book! there are some recipes I'm definitely not quite ready to take on just yet, but even keeping to the "simple" options, there's so much interesting stuff to check out.

    Great video- I love how you can alter a recipe to your taste, or if a different ingredient doesn't cross over perfectly. You asked two questions. First, my favorite cocktail from this book: I really like the Golden Barnicle after watching one of Derek's videos. It is yet another use for pimento dram. Other talking points about the Golden Barnacle include how you make "Donn's Mix", as some authors use 2 parts grapefruit juice to 1 part cinnamon syrup (like Shannon Mustipher), others flip that ratio (Liber & Co.), others use equal parts (Smuggler's Cove). Then there is the white grapefruit vs. ruby red grapefruit discussion. Additionally, I love a Last Word, and her book has a recipe for the Almost Famous, which is a great rum version if you can find yellow chartreuse. Seconly, how to riff on the Isla de Pina: if using Funkin and need some sweetness, how about vanilla syrup instead of simple? Either homemade or Giffard. Try with and without saline? And you already mentioned varying the r(h)ums and trying bitters (Elmakule Tiki bitters? Sother's Driftwood bitters?).

      Don't recall seeing the Golden Barnacle yet, but deffo I'll look out for it. Also, love the Vanilla suggestion. And Saline. And Tiki Bitters... great shouts 👍️

    Thanks for deconstructing that one for us, Steve. I haven't yet tried to make this one, but I'm wondering if that extra layer you're looking for could be something like a dry vermouth. Of course, that might require some rebalancing to make it work. Something to ponder, though.

      Hmmmm, personally cos of my palate, I wouldn't do Vermouth. HOWEVER, thats not a bad shout for a Vermouth lover.

    As it happens I do have real passion fruit and made this cocktail, was spot on… however I did use plateray as I didn’t have the other, still great

    Lorikeet is my favorite. Next one that could do on this channel would be Escape To The Fantasy Island on page 43 or I think that Muertito Vivo page 109 and Tiger Lily page 74 could use some rework
